    Cilantro Chimichurri Recipe is fresh, delicious, tangy, and bursting with flavors of Cilantro, garlic, oregano, and olive oil. It is a perfect condiment and pairs perfectly with grilled veggies like cauliflower or homemade bread.
    Chimichurri Sauce is usually made with parley or a mix of Cilantro and parsley. But to make it extra flavorful, I have made it with just cilantro leaves. Being Indian, Cilantro is one of the most popular herbs that I use in cooking. So I thought why not make it just with Cilantro.

    INGREDIENTS
    1 Bunch Cilantro
    1 tsp Red Chili Flakes
    3-4 Garlic Cloves peeled
    1/2 Cup Extra Virgin Oil
    1/4 Red Onion or 1 shallot
    2 Tbsp Red Wine Vinegar
    2 Tbsp Oregano
    Salt
    Black Pepper
    TIPS
    Add chopped onions and garlic to avoid big pieces of garlic and onion in the sauce.
    Store the sauce in an air-tight container.
    Add a big layer of olive oil to maintain the fresh flavor of the sauce when stored in the refrigerator.
    Also, add olive Oil after pulsing onions, Cilantro, and garlic.
    STORAGE
    Cilantro Chimichurri Sauce is made with fresh ingredients, so it is best to store it in the refrigerator. You can refrigerate for 10-15 days. When using, just stir the sauce and use it as needed, You can freeze it in an ice tray. And once frozen, take the frozen sauce cubes out and store them in Ziplocs. Then you need it, just take out cubes of it and use it in the recipe as required.

    On a personal note, the authentic Chimichurri sauce is made with Parsley, fresh Oregano, Garlic, Crushed Red Peppers, Vinagre, Salt, and Pepper.Yes. And no Olive oil. You suppose to use Sunflower oil. (There is no lime or Cilantro in it).
    Limes and cilantro are typical of Mexican , not Argentine, cuisine.
    I honestly wish those who put Cilantro or jalapeños in it don’t call it Chimichurri. It isn’t! They should just find a new name. As much as I LOVE cilantro I would NEVER mix it with parsley to make Chimichurri.. because it “ain’t “!
