i like to imagine that the second of the 3 days just happened to fall on knuckles’ 18th birthday and he forced sonic & tails to stay in casino park for an entire day while they were passing through because he wanted to gamble

Regarding whether it's daytime or not after Mystic Mansion, given that at a certain point during the stage, the Teams go through bizarre and other-worldly experiences (Like hitting switches that bring paintings to life and that one section on a ethereal-like dimension), it gave me the idea that Hang Castle is a hauted castle themed Eggman base (given how eggman likes to make his bases around a theme sometimes, like Eggmanland in Sonic Unleashed, which is amusement park themed) and Mystic Mansion is some kind of virtual reality room to confuse intruders, hence why it's daytime at the end of it, only for Robot Storm, which possibly takes place on Hang Castle, becomes nighttime, as the Teams broke out of the virtual reality room before making to the top of Hang Castle. I always thought the sun was rising during Rail Canyon and Bullet Station, why else would Tails say we've got until sunset instead of just saying we've got no time. Plus the following stage, Frog Forest is in the daytime.

The speeches before tackling egg fleet from the teams was just the best moment. Shadow's is my favorite of course plus I still remember all four by heart.
Here's my thought about the "daytime at the end of Mystic Mansion but near nighttime during the Robot Storm boss fight" thing, which admittedly came to my mind when watching this video: What if the daylight you see at the end of Mystic Mansion is a mirage/illusion to make the characters think they're almost out of there, only for it to be nighttime right after? Maybe to increase the hopes of escaping the haunted house level before crushing the possibility of getting out? Honestly, that's my best take here.

Maybe the adventure was multi globe spanning? If you were to run around at high enough speed eastward, the sun could never set for you.

I only count the day change when someone state it. Frog Forest and Hang Castle happen on the same day. Since it night at the castle (or the area is designed like that.)

Well from seaside hill to bingo highway we can agree a day goes by, I believe from rail canyon to mystic mansion another day goes by and egg fleet onwards is the last day
So we have seaside hill - day, power plant - day, bingo highway - night; rail canyon - sunrise, frog forest - day; mystic mansion - night; egg fleet - day and the rest happens at night
Just a theory, but considering Metal Sonic needed the energy from the chaos (that arrived with the chaotix... (right? the ending is kinda weird in that regard)) and Sonic wasn´t too late to stop the fleet, would make sense for them to be right on time
The stages are really nice with the time of day thing regardless, nice topic to discuss

I thought it was 4 days as when you get Bingo Highway the 1st day ends.
The 2nd day would have to end at Mystic mansion as it's before Egg fleet.
The 3rd day would be from Egg Fleet to the Egg emperor.
The 4th day I just made up and thought of because the sun is up in the final cutscene but that's just my guess.
Finnaly another one
I think Rail Canyon and bullet station is at Sunrise. So that means that Rail Canyon to Egg Fleet was one day. Thus bringing the counter to 6. Cool vid though. :)
But once the Egg Albatross is defeated, "Eggman" says that they're too late, meaning the time limit is up
