    I asked Perplexity AI, how common is allergy to eggs compared to allergy to gluten?. The answer is fairly long because of differences between children and adults, and Europe and the US, and various studies give different results. The conclusion is that egg allergy is probably slightly more common than wheat/gluten allergy. I think there's a reason why egg allergy is less visible - if you don't want to eat eggs, you don't want an egg-free egg mayonnaise sandwich, but you might want a gluten-free egg mayonnaise sandwich if you don't want anything containing gluten. The same for egg-and-tomato, and in a restaurant, you don't need an egg-free omelette because there are plenty of things on the menu that don't contain eggs. If you're buying for a group of people, it's simpler to buy egg-free cakes that everyone can enjoy (except for other relevant allergies), the alternative risks getting mixed-up, and for a birthday you probably want a single birthday cake.

    Two things for me:
    1. I see they have many stores close to each other and do not see any point for that. In London I see they have stores that are located just a short walk or one street from each other.
    2. Also I see they don’t sell any coffee or so, I therefore believe they will miss people that are on the go. As they could get a drink and a cake at for example Starbuck or so. Which I expect to be a large market.
    What are your opinions on this?

      Good thoughts. but I think London has so many people, density would be surprising how that wouldn't matter too much. And they wouldn't exist if the unit economics were weak.
      Coffee - it's not set up for that at the moment. It's a take away concept. Like buying from a grocery store. Not to be consumed right there and then. Maybe it's an idea for a test store. But doesn't appear to be on the radar

    I have trouble seeing why big producers and supermarkets wouldn’t just offer eggless cakes too + other competitors.. would you invest in a public bakery franchise? Valuation interesting though.

      not really, but the cheesecake shop in australia has done very well and they compete with supermarket cakes. And at a higher price.

      I actually started making a video and went to tortilla in Victoria station. It wasn't that good. I was disappointed. Would prefer a shawarma/kebab. So I stopped making the video as I lost interest
