This series is plenty of fun actually. A tip that nobody seems to have said yet is if you want mobs to stop spawning near your house, you should place down torches everywhere. Mobs don't spawn if there's light so placing torches will prevent that. Also, you can break your boat, pick it up, and place it again. Have fun with the game!
On the topic of raids, those grey guys are called Illager and have different names. There are the pillagers, the ones with crossbows. The vindicators, that have axes, they can disable shields for a few seconds. The witches, that trow potions of healing at the other raiders, they can also heal them selves and throw potions of poison and slowness to make you vulnerable. The ravagers, four legged beasts that do a ton of damage And finally, the Evokers, that summon little evil fairies called vexes that fly around and pass through walls and jaws that appear from the ground in a row. I recommend using bow and arrows for the raid. Also block villagers into their houses to protect them from the Illagers, if you manage to save them they will give you the hero of the village effect that will give you discounts on their trades. Last thing, those big guys you saw earlier are iron golems, they protect villagers from hostile mobs like zombies and Illagers, you can build them by placing 4 blocks of iron in a t formation and a carved pumpkin on top, if they get cracked, use iron ingots on them to repair them.

The more you trade with them, the more stuff they will buy/sell. Some can even sell diamond armor and tools, but you need certain blocks to give them a job (for example a fletching table gives a fletcher). Villagers can also be breed by placing more beds and throwing bread or raw potatoes at them.
If nobody has said it, you can break your boat and take it with you. Also, you should hit dirt blocks with an empty hand so that you don't waste your tool life 👌🏽

The enchanting book you got is for adding enchantments to tools and armor. To do that you'll need an anvil (which u need alot of iron to make). With the enchantments on your book, you could add it to a piece of armor, like the chestplate (for projectile proctection enchantment 4) or a sword ( for sharpness 2). Preferably, I would add it to the chest plate since projectile protection is the strongest enchantment between the two (the bigger the number the stronger it is).
When you wanna make a little bridge across a gap you can crouch so that you can stand on the ledge without falling and you can place the blocks in front of you over the gap to make a bridge. Also killing one of those grey guys that has a banner on him will give you the bad omen effect (the simbol that appeared on your screen) and if you go to a village it will trigger a raid, they are multi-staged and get progressively harder. If you get the bad omen effect again, to get rid of it you need to wait a bit or drink a bucket of milk (buckets of milk cure you from every effect both good and bad, effects are the things they appear as simbols on your screen)
some tips: mobs spawn in darkness. placing light sources like torches stop them from spawning so put a trail of torches towards your house so you won't lose your home and your path to your home will be safe. you can run faster if you push ctrl key. the crops you plant have different stages. the last stage is ready to harvest. the crop you planted near your house will be ready to harvest when it's color is yellow. if you harvest earlier, you will just get the seed you planted. when you are low on food, don't get too greedy and return to your home and put some stuff away. in caves, you can use waterfalls to swim up and down. use shift key to go down the water and jump key to swim up. water puts out the fire of your body too when you walk on it or right click water on the block you are standing. attack your boat and you will get your boat back. you don't need to craft new ones every time.
