Tempeh is so healthy. The fermented soybean can be marinated and used in many ways. We shouldn't downgrade tempeh to a meat substitut. Because its not!
    I love your recipes btw.😁
    Greetings from Germany.

Tempeh is an ingredient used in Indonesia a lot, where it comes from. It definitely is it's own ingredient! NOT a meat substitute

Your recipes are so yummy. I can't wait to try your chili. May I suggest a tablespoon of unsweetened cocoa powder in Brian's recipe? He's making a large pot, so a tablespoon will work, and he may want more depending on taste. A pinch of cinnamon is good too. Tip: Let it cook a while before adding more cocoa powder. The cocoa will help to enhance the chili flavor and give it more depth of flavor. You might also consider using Trader Joe's cooked lentils.

My husband and I made this last night and it’s the best chili I have ever made! We added 2 large cans of crushed tomatoes and 1 can of salt free Rigel tomatoes. I increased the chili powder and cumin and I omitted the mushrooms for a personal allergy but increased the lentils. Amazing chili my name for it!

Loved the video! Loved the Chili! Didn't have any mushrooms so substituted it with cauliflower - delish! Have made so many recipes from my Be A Plant-Based Woman Warrior cookbook! It is my current favorite - especially since I bought the spiral bound! :) Thank you for all you do!

I must say that I have had more problems coming up with a good veggie chili recipe, but this one is it. I made it last week and have been eating on it since. It is wonderful. My husband, who is a part-time vegetarian who does not like veggies, actually liked it, too. 🤓. Thank you.

Have been liking this chili for awhile. Freeze up a lot this time of year when the garden is producing too many tomatoes and peppers to eat fresh. Did a Cincinnati variation on the last batch, which turned out pretty good, imho. No salsa or BBQ sauce. Instead of your spices, Chili Powder, Cumin, Cloves, Allspice, Cinnamon and a lot of diced garlic in with the veggies. Nice over pasta.

I need to give this a try. There are a few things in there I never thought of adding to Chili. I know initial sautéing of the aromatics makes a difference, but I've gotten lazy. When making chili, I usually just through everything into my Instant Pot and pressure cook for around ten minutes, depending on the ingredients involved. No matter how many times I do it, water sautéing still doesn't feel quite natural to me.

try using faux chicken flavoured broth or vege stock in liquid form for sauteing. it works great & adds more flavour to the caramelising onions or whatever veges you're softening.

I made this today and it was delicious! I tweaked things a bit (Jane said it’s okay). I’m still new at this (2-3 months) but I’m liking and wanting foods I always steered away from before. Adding more spice too.
From years of abusing my body with bad foods, I would get heartburn easily and therefore didn’t eat peppers or spicy items. I can see that changing. It’s kinda cool!
Thanks for the recipe and fun video.

A small amount of bulgar wheat thrown in at the last minute slightly mimics ground beef, absorbing some of the liquid as flavor. Maple syrup in chili!!! Oh, dear! That's like sugar in spaghetti sauce. Just no. They are supposed to be acidic. I use scissors to chop up salad and greens. Brian, "I like to chop them (tomatoes) up." Ann glares. lol 16 oz is 32 T--11X the amount. Oh, my! You all are so funny. Or you can feed more people by adding rice and greens or salad. Thx. lol God bless.

Bryan doesn't know what tempeh is! It is fermented soybeans (or other beans) so is nothing like fake meat. It is much tastier and has more health benefits than tofu. So if you are ok, from a not-fake-meat perspective, using tofu you should be ok using tempeh.

@@galkinp I add about 1 tbsp for 6 cups of chili. It gives it this extra but you can't tell it's cocoa. It deepens the flavor. It's yummy! Especially when making chili with lentils. It tastes like there's beef broth or something. Doesn't taste like chocolate at all. Just umami. 😃

I'm glad I did re-read my comment before hitting the send button. It would have been embarrassing 🙃. Personally I would omit the bbq sauce and salsa. I like my chili hearty and more tomato based, not sweet or hot...beans, tomato sauce, canned tomatoes, seasonings, onion, bell peppers or pablanos, celery. Pretty standard and yummy!
Cornbread on the side and a bowl of Chili topped with diced green onion, dollop of P.B. sour cream and P.B. cheddar cheese shredded (Daiya). Oh my goodness it sounds so good...going to have to make some tomorrow!

Scott Jurek has a vegan recipe for Minnesota Chili that uses bulgur wheat to give it the texture you may be looking for when you brought up seitan. I used to leave out the oil and make that chili, but I like the flavor profile of this one even better-and I thought his was hard to beat.
