    I'm a service manager for an AC company in Miami and I'm now sending our techs to your channel to motivate them and help them be more thorough with their diagnostics and to learn a thing or two. I think its great on how you troubleshoot issues and not cut corners. Even little things like taking the top off to properly clean the condenser coils instead of just hosing it from the outside. Keep up the good work.

    Once I worked for a very large coffee-and-donut chain that America practically runs on (intentionally-obvious clue) and my manager asked me to take a stab at cleaning our Hoshizaki (limited store budget and being mechanically-inclined meant that I did a lot of the behind-the-scenes grunt work, which I preferred over serving customers anyway, so a win-win all around). Granted, I used standard consumer products, but I managed to address nearly every issue outlined above (except for the main water valve) and within a few hours I had run three cleanings, two sanitizing cycles, and was producing perfectly shaped/sized/formed, water-clear cubes worthy of a fancy cooking magazine photo shoot. Really amazing cubes from those Hoshizaki units!

    I'm always cautious about mentioning reset buttons on PCBs to customers. It just results in them "fixing" the machine until it's really broken, and also risks them poking about in amongst live circuitry they know nothing about. Especially dangerous where water and grounded metal cases are involved.

      Yeah I am very cautious too, i only ask enough to understand if they actually know how to reset it, i never show them how... I will discuss this in depth on the stream tonight

      I agree with this. Hitting the internal reset button can sometimes erase stuff like cycle programs and trouble logs making the inevitable repair call unnecessary difficult.

      I love that Big Clive watches these videos. I watch Big Clive all the time. I watch these HVACR videos constantly even though I'm not in the business. I did install a Manitowoc Indigo in my house though. Haha

      I have some colleagues that master this art on an almost Japanese level of perfection... Only they do not exactly apply it in the correct way... After a week in the office you can ask them about certain task they had been supposed to get done only to find out they not even started because of beeing so busy. Only no one will never find out what it was they have been so busy with.

      @@alexku8452 To me that's more the art of bullshitting. I see this a lot in the public sector where in some places its pretty much institutionalized as part of the org structure (like in public utilities where you'd clock in then go for 2+ hour breakfast).
      I work in IT. There's highly complex tasks that will take weeks to play to prepare for, but the actual execution of takes only a short while to start followed by hours to days of waiting while everything does things before the next time a human needs to do more than monitor for problems.

    Outstanding video on ice machines. So many good points they should be using your video for educational purposes. Even better you had the two main competitors back to back to work on and show some differences. Man you are not kidding about sitting on that ladder and having to look busy.     Love it. I miss Ice machines and walk-ins now that I’ve switched to commercial HVAC. I did get to work on a refrigeration system for a CO2 tank on Friday, but it didn’t quite scratch the itch. I live vicariously through your videos. Lol

    I'm starting to be a bit shocked at the plastic cube guides that break that easily, when a bit of perforated sheet metal would do the job without half the trouble.

      Metal guides add to the manufacturing costs and thus either increase the final cost of the machine (making customers look to the competition for cheaper units) or reduces Profit Margins (a Cardinal Sin in Industry)...

      @@HVACRVIDEOS Was it any problem with the stainless steel? Im thinking in the way of what can happen when a child licks a steel pole in the winter - if there is any risk ice getting stuck on the guide? The evaporator is steel, but that is heated up during the harvest cycle so it hasn't any freezing problem.

    Are metal cube guides not an option?
    You'd think this would be a an issue they'd foresee at the manufacturer unless they just dont care?
    It's a very expensive machine, even $200 extra for a metal cubeguide wouldn't hurt their bottom line.

    Good job as always Chris. I like Hoshizaki ice machine, really good machine. The pump out is periodically, it do it on every 2nd cycle after startup, and it can be adjust for every cycle, every 2nd, 5th or 10th cycle.

    Most ice machines I see are mantiwoc! Heard some horror story's about Scotsman! You are so right about good water flow! Worked on a machine with bad water flow! Spent a lot of time trying to diagnose the problem! Finally took apart the supply line and found one black iron fitting that had rust build up inside restricting water flow! Black iron fittings should never be used on an ice machine supply ever for that reason! Thanks for another awesome video! Good explanation of how the ice machine works!

    I took the day-long Hoshi class a few years ago, but never had a call to work on one. I did service a TON of Mani's, and I think they are a better design, especially when it comes to being able to clean and service the machine. I don't immerse the entire thickness probe in cleaner, just the electrode area. I never had to replace one that way.

    Also would mention long harvests and freeze ups can be related to charge being off and nickel grid slats separating from the evaporator. There are ways to repair these. I’m not familiar with the Hoshizaki cubers but the Manitowac cubers they are tech friendly. I ran into one recently where the last tech wasn’t using nickel safe cleaner, evaporator was trashed. Very good explanation of the flooding TXV. 👍 Keep up the good work.

    We use all Hoshizaki ice machines at my facility & I was struggling trying to learn this equipment. Best thing I ever did was to download a factory ice machine manual & spend a few evenings reading it. It is hard to troubleshoot a machine if you don't understand the sequence of operations & how it works. Nice video & a good explanation of basic operations on the Hoshizaki ice machines. We also use the Hoshizaki nugget ice machines as well.

    I wish they would come and actually look at the Hoshizaki ice machine we have at work. Shuts itself down in safe mode and starts doing the 2 beep code. They have me reset it and after a while it goes back into safe mode with the 3 beep code. Sometimes it even does the 1 beep code.

    I have been working on Hoshi machines over ten years. Cube guide pieces were causing so many service calls for our company that I came up with a way to stop them and keep the cube guide in the machine until there were too many pieces removed from the cube guide for usage. If you get a schedule 20 3/4" piece of pvc and purchase a NSF approved piece of nylon netting with holes in it just slightly smaller than the cross section of a piece of the cube guide pieces that break out, wrap the netting around one end of the pvc and slide pvc into rubber hose coming from reservoir to waterpump (at the waterpump end) then voila, the pieces get stuck in the netting instead of the waterpump or purge valve. When you go back in six months for another cleaning, dump the pieces out of rubber hose and look to make sure you don't have too many large holes in your cube guide where it eventually has to be replaced. I run alot of Hoshi's this way and service calls are limited and customer is happy with constant ice.

    Great video. One thing I always do when I take the check valve apart is to give that spring a little stretch. Making sure it hasn't become compressed and weakened over time. Hoshizaki makes a great machine however that freeze up issue is a time consuming pain in the ass.

    Could the fault on the third board become cleared due to being powerless so long? Ergo a capacitor which holds the faults and when that capacitor discharges completely for being off like for 12 hours (and they have had the machine off for months), everythng stored in board gets lost. (Basically, battery-backed memory but with a capacitor instead of battery).
    This can also be a intentional function - if the board is powerless than a certain amount of time, it will "force" a reset - simply by checking a capacitor, and if the capacitor is empty, the board have been out of power enough time to trigger a reset.

    Sequence of operation:
    1st - 1-minute fill cycle
    2nd - Initial harvest cycle
    3rd - Freeze cycle
    4th - 10-second pump out cycle
    5th - Normal harvest cycle

    Ice machines are notoriously difficult to diagnose. Especially since you typically need to sit with your thumb in your butt and watch to see what it does. Good job. I have had some serious head scratchers in my day, the most frustrating of which ended up being sabotage; someone opened up the panels and played with the dip switches (who does that)?! That clear Hoshizaki hose is super versatile. I was sent some 1/2in once on accident and I ended up using it up on miscellaneous other stuff and ended up ordering more just to have on hand.

    Hoshizaki‘s are also known for what’s called in the industry as plate separation on the evaporators.

    I just worked on a hoshizaki freezing up yesterday and it turned out to be the float stuck in the up position. The little black bar on the bottom that keeps the float from falling out was some how got wedged holding up the float.

    They should or you come up with a metal ice break/diverter/guide settle a plastic one that ends up breaking off into the machine but then they couldn't sell parts but great video and see more into ice machines...

    I remember going to the Hoshi class in Camarillo they gave us that same book you referenced in the video. I like the manitowoc best. For me Scotsman are the worst. Lol. Great video broham

      Im thinking the same way - in the same way the tounge gets stuck if you lick a steel pole. In the same way I think with the ice, getting stuck on the guide if its stainless steel. There must be a reason they changed it to plastic.

    you can set pump out frequently from 1,2,5,10 cycles depends on dip switches 5,6

    This. Busywork is a key to keeping customers satisfied. When I'm on site, and I have to wait for servers to reboot, update, back up, and so forth - I can't leave. However, that doesn't mean that I can't do things to show the customer that I didn't just sit there. On a weekend or evening, for example, I'll restock the paper in the faxes and copiers (which they should do on Friday before they leave, but everyone's in a hurry. So they get stuck with it Monday morning when the phones go nuts. Not smart.) I'll clean up the server room, I'll check connections on various machines, make sure the printers are cleaned up (thermal, dot matrix, and laser), and so forth. They're paying for my time anyway, they should get as much as I can give them. If I'm working on a system during business hours, I'll take the time to ask people around what other problems they might be seeing, or things they might want done.

    The corrosion in and around these machines is why I order my drinks "No Ice". Let alone the slime fungus that builds up when things aren't flushed out regularly. I worked in an ice house. Blocks from a salt brine were the safest providing no brine got in the stainless container.

    The fact that you turned the machine on, started talking about the order of operations, you were able to get a stumble in there and still timed the compressor as it turned on. I love a professional who knows what he's talking about and can prove he isn't being a bullshitter. Makes me want to go join a trade.

    I.e. if you look busy (even if all you're doing is make-work while waiting for a cycle to complete), the customer thinks they're getting value for the time you spend on the machine and you're not just stretching out the call to pad your Bill...

    We have the same model here and gave us problems lately not making ice and dirty changed all the clear tube Yucky... ended up being the bin switch was intermittent

    I'm highly suspicious of the power switch. I've had intermittent problems with those on the Manitowoc machines.

    So an expensive ice machine doesn't have a screen to protect the pump, but the one in my pond did.

    Hn. Pieces that big getting stuck in the internals of the machine. Wouldn't something as simple as a sieve prevent the cube guide pieces from getting to the machine's internals? Doesn't even need to be a fine one, those cube guide grates look about 2mm thick.

    I have a question. Ice thickness probe and board work, ice is being made but the harvest is not fully dumping the ice. I've adjusted the thickness probe and all.
