Salsa is amazing on eggs. I put it on my scrambled eggs and omelettes. Salsa is also great on potatoes. I have cooked slices of potatoes on a cookie sheet pan and used them like tortilla chips.
Amanda - this looks really awesome! I aprpeciate how you used the less than ideal items, great way to salvage and use it all. My mom loves fresh pico de gallo, I bet she would love this too! I could totally see it used with eggs (omelette, quiche, scramble, etc) or maybe a fajita/burrito type dinner. 💚

Send some of that rain up to central Virginia!!! We're in a drought up here. I haven't gotten any tomatoes because the deer have eaten my plants and tomatoes!! I've only mowed my grass twice in the last eight weeks. Glad to see you back!!
At some point I want to use mrs wages mix to make sauce. I'm 77 years old and using short cuts to put up food. I use USDA food preservation guidelines. It helps to have prepared food on the shelf.

One use we have found for our salsa/pico is we add it to rice on Mexican nights etc (liquid cooks in and solids add a nice extra bit of something)

You could make tortilla chips or pita chips and use the seasoning that you like on them. I used to make them a while ago.

Have you tried the Siete brand chips? They are grain free and made with avocado oil. They are tasty and don’t make me feel gross.
