  • how to make a PEACH GALETTE PASTRY. Galettes are seemingly more popular than ever thanks in large to Instagram and how photogenic they are. This lead me to a EASY Peach Galette recipe that I tried out for the very first time. The difference maker was the fresh in-season peaches I picked up and the incredibly flakey pastry pie crust. Galettes our a french pastry and very similar to a pie, but easier to make and just a delicious.

    PIE CRUST (MAKES 2 PIE CRUSTS)
    8 oz unsalted butter 2 sticks
    ¼ cup vodka chilled
    2 tbsp water chilled
    2 tbsp apple cider vinegar chilled
    12.5 oz AP flour 350 g
    2 tbsp sugar for sweet galettes
    1 tsp sea salt
    PEACH FILLING
    6 peaches about 1.25 lbs, cut in half and pitted
    1 tbsp cornstarch or tapioca flour
    Generous pinch of salt
    2 tbsp lemon juice
    1 tsp vanilla
    ¼ cup white sugar
    EGG WASH
    1 egg yolk
    3 tbsp milk

    Galettes are essentially pies without the top crust.. I would question anyone who told me otherwise. Seriously delicious and very easy to make! I'd recommend this to beginners and experts....and fellow anti-chefs.

    I just made a blueberry galette. Before adding the fruit, I smeared the crust with homemade lemon curd. It was hands down the best thing I’ve eaten all year.

    Try rolling the crust on parchment, then slide onto a rimless cookie sheet!

    After I learned about galettes I don’t make the traditional double crusted fruit pie anymore. You can use the two pie crusts for their own galette

      Yeah peaches and nectarines are in full season over here. its glorious! Nothing better.

      You can use any fruit! I was close to doing a strawberry rhubarb one. I’d recommend that!!

    Could I not use the vinegar, just the vodka and maybe some water or sour cream?

      Yes, vodka is as good as vinegar, prevents a tough crust by inhibiting gluten development

    The editing is awesome. Another tip Chef- use a little vodka in the crust. Yep, sneak some booze in there-its a winner!!

      Haha this recipe also mentioned the booze thing. I guess it’s a good way to limit the amount of water you add to the dough. I was just too cheap to go out and get some vodka!

    1st,I realize this is 2 years ago. 2nd, the best galette I ever had was in Maine and it was also peach but instead of pie crust, was made with a croissant like crust. Best pastry I have ever had in my life! Please make one this way and teach me how to do the layered crust because I've tried and it's awful every time. 😔

      I just ignored that. I didn’t use it either. I used water and apple cider vinegar

    I know this video is old and you probably won't see this question, but I have to ask. Did you do this galette twice? At 4:32 you are holding the pan with two pieces of parchment paper under the galette that has visible signs of leaking on the left side (your right). Then at 5:28, there is only one piece of parchment paper and no sign of peach juice leakage. Also, the first one doesn't appear to have as many folds as the second one. This is a really good video and it really doesn't make a difference. It's just that I've been binge-watching and saw another video of yours where I'm pretty sure that you admitted to a redo of something that you had problems with. So I'm just wondering why the 'cover-up' now?

      tbh i think he just moved the finished galette from the cooling rack to the cleaner sheet of parchment paper from the bake. it got rotated when he did that, so the pleats in the crust look different. idk if ur still wondering, but that’s my best guess.

    Roll out the pastry on the parchment paper then there is no need to struggle with trying to move it.

    Blanch your peaches in boiling water next time to remove the nasty fuzzy skin
