    Seems easy enough to make! I always hated spending so much money on buying it from the store but it is definitely an essential to have in the kitchen. When you mention replenishing by just adding more alcohol, can you still use it right away or will it dilute the flavor?

    According to the US Food and Drug Administration (FDA), to be labelled pure single-fold vanilla extract the liquid must contain 13.35 ounces of natural vanilla beans in every gallon of alcohol. Commercial double-fold pure vanilla extract contains 23 ounces of vanilla beans per gallon of alcohol. The FDA recommends the spirit should be at least 35% alcohol (70 proof). Ideally, 40% alcohol (80 proof) should be used. For the home baker, the FDA requirements equal 0.10 ounces of vanilla beans in every 1 ounce of spirits. If you’re using average-sized vanilla beans, 6 to 8 beans equal one ounce. For plumper vanilla beans, 1 to 3 beans equal one ounce. For smaller vanilla beans, you’ll need 15 or more to make up one ounce. If you prefer to use a cup measurement, the proportions are roughly 3 whole vanilla beans per 1 cup of spirit (80 proof). Again, this depends on the size of the vanilla bean. It’s best to weigh your beans using a measuring scale to ensure you get the perfect beans-to-spirit ratio for single-fold vanilla extract. If you want a stronger vanilla flavor, double the beans you add to the same amount of alcohol for double-fold vanilla extract.

      Where did you get the small bottles?
      BTW, I use a Vodka that isn't expensive but is good, I drink vodka gimlets with it: Burnett's Vodka, 40% Alcohol, 100 Proof. Cost appx $10.00 per liter, aka "a fifth".
      K, now bout those lil bottles ???

    After the 3+ months, do you remove the vanilla beans? And will this vanilla extract have an expiration date?

      I actually leave the beans in the vanilla and I use it I will top it back off with more alcohol to refill the bottle. I do this when it gets about 1/2 empty. Then just keep going. It's like a perpetual bottle of vanilla. It will last several years in a cool dark place. If it does start to smell bad or get cloudy then you will need to toss it. :)

    You were saying to keep the beans covered. What do you do when you start using it and it goes down. The beans won’t be covered. Should you take the beans out when it’s done ? Thank you

      You can leave the beans in. Once it's done completely and ready to use I will top mine off every now and then to keep the bean moist. :)

      You’ll want to use regular unflavored vodka and no it will not taste like vodka.

    Hi Sam had a question
    Once you start using your vanilla extract, should you remove the vanilla beans? I’ve heard they could get moldy. 🤔

      I like to make sure mine stay submerged, but I also go through mine very quickly. If you are going to have it for a while it probably would be a good idea to remove them from the bottle when they are no longer submerged. :)

      Nope! I just continually top off the bottle with more alcohol so I have a perpetual bottle of vanilla. :)

      When my bottle gets about halfway empty I will add some more vodka in to make more. As long as your beans don't dry out you can keep on adding and reusing it. :)

      Just occasionally. I leave mine in my pantry and if I see it and think about it I shake it. I try to do it at least once a week.

      ALL flavor extracts have booze in them. In the old days the alcohol content was labeled as such. E.g. a tiny bottle of peppermint extract was labeled as 89% by volume. That's 178 proof. Vanilla was labeled as 22-1/2% by volume. I don't see that on the bottles anymore, but only that the mixture contains alcohol.

      I’ve never personally made it without vodka but some people have mentioned using vegetable glycerin and I talk about this some in the blog post.
