CARIBBEAN RICE AND PEAS | JAMAICAN RICE & PEAS IN INSTANT POT/PRESSURE COOKER| || FRUGALLYT

  • Welcome back to my channel! If you’re looking for a quick alternative to making rice & peas this may just be the option for you. I just love my instant pot and it makes cooking so much easier!
    Beans were rinsed before they were added to pot. Cook beans for 20 minutes total.
    INGREDIENTS:
    3 cups parboiled rice
    1 1/2 cup red beans
    2 cups coconut milk
    2-3 cloves garlic
    1 scallion sprig
    1 tbsp salt
    1 tbsp black pepper
    2 sprigs thyme

    Thank you for this recipe. I followed and the rice and peas came out delicious. I used creamed coconut instead. You get straight to the point and that what makes your recipes easy to follow.

    Did you pressure cook the red beans or you had it on saute mode??....plus how come you just didn't do everything together at once beans and rice included

    why didn't you cook everrything together with the coconut milk inside also

      Because in an instant pot the coconut milk will separate and the fat in the milk will curd then you will get a messy rice mess

      It's not essential. It's a very subtle taste.

    does the rice have to be parboiled

      Parboiled rice is my preference but i have tried it with jasmine rice as well.

    Thank you for the recipe. I would love to try it but need to know the exact amount of water to use in the recipe. I hate mushy rice!

      One cup of water for one cup of rice!!! :) (Any type of rice needs 1:1 ratio because unlike stovetop cooking water doesnt evaporate) so just make sure after the beans are cooked theres 1 cup of water left, and then 2 cups coconut milk makes 3 cups of liquid for the the 3 cups of rinsed rice youre putting in

    I love Jamaican food.... At home we go simple. We use can beans. The last time I tried the can coconut milk I didn't like it so never tried again. Maybe it was the brand.

      Sugaryemi J I like the Caribbean rhythms brand, the Goya tastes weird to me. The canned one does make it easier too.

      Try Grace cream coconut in a red box. It comes as a solid. Tried powder and can milk and nothing gives it the more authentic coconut flavor than the cream coconut

      yes...just add them after the rice is cooked and let it warm with the rice

      It makes the rice fluffier & doesn’t taste like coconut but you don’t have to use it

    Hi, every time I make rice it seems to come out all sticky even Basmati in my instant pot. What am I doing wrong? I do equal water with rice and cook on manual pressure high for 6-8 mins and let the pressure decrease naturally. If anyone knows or has tips? I'd appreciate it.

      If your rinsing the rice before cooking that’s why even if the recipe calls for it NEVER RINSE THE RICE I add a little coconut oil too the water keeps rice separated n not sticky also use a measuring cup for your water (the big glass one) but use the measuring small cups for your rice got tired of my rice doing the same then I tried it that way n no issues since ( hope that makes sense)

      I am IM she didn’t have a Jamaican accent and she sounds like members of my family. My family is from Dominica but many of the smaller islands have a similar accent. St. Lucians, Dominicans and Grenadines sound very similar.

      They don't all cook it like this actually. St. Lucians cook the rice and peas separately for example. There is nothing wrong with her specifying 'Jamaican,' most people do.
