For a 22 to 25 cm king's cake (galette des rois):
For the homemade praline (optional):
200 g hazelnuts
100 g almonds
100 g pecans
265 g granulated sugar
65 g water
For the pastry cream (crème pâtissière):
300 ml whole milk
3 large egg yolks
60 g granulated sugar
20 g corn starch
10 g all-purpose flour
20 g butter
1 tsp pure vanilla extract

For the almond cream (frangipane):
100 g butter
80 g ground almonds
80 g ground hazelnuts
50 g granulated sugar
5 tbsp praline paste (about 200 g)
1 large egg + 1 egg yolk
20 g corn starch
150 g pastry cream
+ 2 disks of puff pastry
+ 1 egg white to seal everything

I've made the almond-only version of this and made the pâte feuilleté for it. The end product is sensational. Crispy, crunchy, light and airy, bursting with flavour.
It's what I would call a "perfect recipe".

It’s a wonderful tutorial. I did it all. It seems to me that you only need about 1/3 of the praline paste mixed in with the frangipane and crème pâtisserie. I made the whole recipe for the praline and saved 2/3 of it. Could you comment? Does your recipe here make one or 2 galettes? Merci, Je suis ravie d’avoir enfin réalisé cette galette. Bravo, William.

My granddaughter is spending 18 months on a Church mission in France. I love all the foods she talks about that she has eaten. This looks and sounds amazing. I can't wait to try it!
Church mission? Wow, what a sham. She is being used by her church to try to increase market-share for her brand of Christianity. France is overwhelmingly Roman Catholic, and I'd bet her church is a different branch of Christianity. Her church wants a share of that sweet Roman-Catholic cash. Missions are all the same....market-outreach.

Technically, Kings' Cake, not King's (des rois, pas du roi), but wow, I had never heard of it!
Okay guys....I made this. It's really strange tasting. The filling is bizarre. Don't believe me? That's cool. Make it yourself and let me know what you think. Is it worth the colossal amount of time it took to sort out the recipe? Is it worth making far too much of the filling components because William was too lazy to scale down the recipe appropriately? I found that it most certainly was not.
I guess may be you were expecting a "cake" in a more traditional style? I've tried it and I very much liked it. May be because I love the taste of all the nuts in there.

The second nut added was pecan nuts not walnuts and amaretto is actually made with peach kernels not almonds, although it tastes like it
Yes, those are pecans.....but you are wrong about amaretto, as it may be made from apricot kernels, bitter almonds, peach stones, or raw almonds, all of which are natural sources of the benzaldehyde that provides the almond-like flavour of the liqueur.

1. Don't add music to a cooking channel, this is annoying even without the voice.
2. Why is your face popping up constantly? I came to see a recipe not a talking head. Keep camera on the food.
3. Too much sugar with all that caramelized nut brittle. Less sweet is better. I think the filling is overdone.
