Errata: A shield can only be dropped/picked up as an action per the PHB. However, a weapon can dropped/picked up with a free action and an interaction because balancing. The 2nd build does not rely on the shield to work so it can just be omitted.
If you would like to use a shield and still have a bonus action attack, just use polearm master and a spear. Your die would be 1d6 and 1d4 so it wouldn't be that strong, but you could take dueling so you can deal +2 damage with both the bonus action attack and the action attack. You can also throw a spear, so as a champion fighter at 10th level you can get thrown weapon fighting to add another 2 damage when you throw the weapon. Crusher and piercer feats can be used with this build really well. When you land a crit with your bonus action attack, all allies have advantage attacking that enemy. As a half-orc, with the piercer feat, you deal 4d6 piercing damage plus your bonuses. If you're 10th level with 20str and throw the weapon, it's 4d6+9 damage. If you're able to get a returning spear from an artificer, that's +10 damage with each thrown attack. +8 with each melee attack. Crusher also allows you to push an enemy away 5ft, so with polearm master it's basically a bonus action disengage against any creature with a 5ft reach. It will also make it so if that creature moves back into melee range you get an opportunity attack against it.
Good builds Dap! I’d play either one. I did play a champion assassin multi crit fisher to level 9 in one campaign and the combo was strong, good infiltration and then hard hitting once the fighting started.

Besides custom lineage and Human Variant I am a massive fan of Dwarves. Especially for a champion fighter it makes me feel like Gimli from Lord of the Rings with a mountain dwarf champion fighter with a greataxe.
I am afraid, you are mistaken about Wreckless Attack : "... When you make your 'first attack' on your turn, you can decide to attack recklessly..." so you only get 1 advantage per round with this feature. If you want advantage on all of attack on same round, you gotta wait until Samurai subclass.

I appreciate you making a subclass widely considered bad viable. Though it does take an action to don/doff a shield PHB. 146
