[ENG SUB] Instant Pot Korean Pork Bone Soup (Gamjatang) 인스턴트팟 감자탕

  • My fiance had a hundred bowls of gamjatang in Toronto before eating it in Korea and fell in love with having it with noodles and more vegetables! If you don't have an instant pot, you can use a pressure cooker or just braise on the stove!

    Ingredients
    1.2kg Pork Neck Bones
    50g Glass Noodle
    4 Rice Cakes
    2 Bay Leaves
    10 Peppercorns
    2 tbsp Shaoxing Wine
    280g Potatoes
    Sauce
    ½ tbsp Soybean Paste
    ½ tbsp Korean Pepper Paste
    ½ tbsp Minced Garlic
    2 tbsp Korean Pepper Powder
    1½ tbsp Fish Sauce
    1 tbsp Perilla Seed powder
    ¼ cup Soup Soy Sauce
    5 Baby Bok Choy
    60g Mushrooms
    23g Perilla leaves
    65g Green onion
    25g Chilies
    1 tbsp Perilla seed powder
    Dipping Sauce
    1 tsp Korean Mustard Sauce
    1 tsp Sugar
    2 tsp Vinegar
    2 tsp Soy Sauce
    2 tsp Water
    Recipe
    Soak the glass noodles and rice cake to let them soften
    Add all the ingredients for the sauce in a bowl and mix well
    Boil water with bay leaves and peppercorn
    Bring the water to a boil, add meat and shaoxing wine and boil for 10 minutes
    Remove the boiled meat (skimming the fat but keep the broth for later) and rince with cold water
    Mix the sauce and marinate in the Instant Pot for at least 30 minutes
    Chop the vegetables
    Trim the tips of the bok choy, cut them in half and clean thoroughly
    Add 1.5L of the pork broth and potatoes to the Instant Pot
    Cook for 35 minutes on the "meat" setting
    For the dipping sauce, first mix the mustard, sugar and vinegar
    Add soy sauce and water and mix well
    When the Instant Pot is done, take out the meat and potatoes and move to another pot
    Add the vegetables, perilla seed powder and the remainder of the Instant Pot liquid
    Add the glass noodles and rice cakes and cook until soft
    I added a little more red pepper powder and fish sauce

    2 tbsp 청주
    280g 감자4개
    소스
    ½ tbsp 된장
    ½ tbsp 고추장
    ½ tbsp 다진마늘
    2 tbsp 고추가루
    1½ tbsp 멸치액젓
    1 tbsp 들깨가루
    ¼ cup 국간장
    야채
    5개 청경채
    60g 버섯
    23g 깻잎
    65g 파
    25g 고추
    1 들깨가루
    찍어먹는소스
    1 tsp 연겨자
    1 tsp 설탕
    2 tsp 식초
    2 tsp 간장
    2 tsp 물
    레시피
    당면과 떡을 미리 물에 넣어 불려주세요
    소스용 재료를 모두 넣어 잘 섞어 만들어 주세요
    월계수잎과 통후추를 물에 넣어 물을 끓여주세요
    물이 끓으면 고기를 넣고 청주를 넣어 10분정도 끓여 주세요
    끓여진 고기는 건져내어 찬물로 씻어내주세요 육수는 기름을 제거하고 보관해주세요
    준비해둔 소스를 버무려 30분이상 재워주세요
    감자탕에 들어갈 야채들을 손질해주세요
    복초이는 꼭지부분 한번 더 정리해주고 반으로 갈라 씻은뒤 준비해주세요
    재워놓은 고기에 보관해둔 육수 1.5L 넣고 감자도 이때 꼭 넣어주세요 전 깜박하고 나중에 넣었어요
    인팟에 넣고 Meat 모드로 35분 조리해주세요
    감자탕집 가면 있는 찍어먹는 겨자소스를 만들어 주세요
    먼저 연겨자와 설탕 식초 먼저 넣어 잘 섞어주세요
    간장이랑 물을 넣어주세요
    인스턴트 팟이 다 되었으면 고기와 감자 먼저 빼서 전골 냄비에 올려주세요
    그 위로 야채들 1tbsp 들깨가루 올려주신뒤 인팟에 남은 육수를 알맞게 넣어 끓여주세요
    당면과 떡을 넣어 익으면 완성
    전 고춧가루랑 멸치액젓 조금 더 넣었어요 입맛에 맞게 가감하세요

    At 4:42, you should be adding back the pork broth. Only use water to top up if you don't have enough broth!

    I wouldn't call this "INSTANT POT" soup though since you not only boiled the bones before using the IP.. but you then cooked everything in yet another pot AFTER the IP... Not sure you even needed the 25 minute IP in this case..
