  • Recipe of eclairs, some creamy chocolate cupcakes also known as petisús typical of the French confectionery, which is made with choux pasta, custard cream and chocolate ganache.
    I love this type of cakes, they are the easiest and tastiest, so in my channel I decided to show you the 3 most important elaborations of the pastries:
    -Get Choux (for profiteroles, petisús, fritters ....)
    -Crema Pastelera (egg): for all types of fillings, Catalan cream and more elaborations.
    -Ganache chocolate to cover all kinds of cakes and pies, even to make chocolate truffles.
    The ingredients for the shopping list are:
    100 ml milk (without lactose, skimmed or semi-skimmed)
    100 ml of water
    80 gr unsalted butter
    1/2 tsp salt
    10 gr or 2 tsp sugar
    125 gr of wheat flour of all uses (without leavening)
    4 Eggs
    500 ml of milk (skimmed or semi-skimmed)
    4 egg yolks
    80 gr of sugar
    50 gr cornstarch
    200 gr chocolate coating
    155 ml whipping cream (whipping cream)
