Laura, this was great! I added baby carrots too! The 5 minute microwave was a big tip! I let both carrots and potatoes marinade in bag for about 30 minutes! Best tasting roasted carrots and potatoes I ever tasted! NOW my kids think I have the potential to cook! LOL Thank you!

If people have a problem with the microwave and plastic bag technique you can totally put the heated potatoes into a bowl and toss them around same effect. Also if the microwave freaks you out heat them on stove , still good! Not too long though you don't want them to get mushy. Thanks Laura!

I love the microwave trick, what it does is it makes sure that as soon as your potatoes get that color that you want you can take them out because they are already cooked by that time.
All microwave does is precook the potatoes about 25% of the way.

Beth S Yes that's true all types of cooking processes take some nutrients away from natural food. Even chilling food well do the that though not in an equal effect. I don't have scientific info on this subject but you can always look up videos on here. I'm sure you're bound to find one that specifies and explains. My guess would be a documentary would do best.

I actually just used your recipe and method, but instead of potatos I used chicken and it was perfect. Not crispy, golden brown

I never thought I would say this, but I'd rather make your roasted potatoes, than chips, any day! Thank you for this healthy recipe! My husband ask for this EVERY Friday as his treat!

I made these potatoes and my husband absolutely loved them. They looked so good I made them right away with the ingredients I had on hand. I used dried rosemary and garlic powder instead, the rest I followed to a T!!

No microwaves needed just warm them up in the oven for 5 mins
The microwave dries up your food.
Try heating up a bun in the microwave. Then cool it off ir gets hard as a rock

Thats a bad analogy because a potato is a vegetable with a lot of water and a bun is not. Microwaving helps evaporate and cook some of the water in the potato so it is more crispy
