As an Italian-American close to her roots, I think I might have a pizza tip for you: meat BEFORE the cheese; that way your pepperoni won't dry out. I make pizza from scratch and use tips I got on my trips to Italy.
I make garlic bread pizza. Get a loaf of fresh french bread. Cut in half. Spread tons of butter on it and sprinkle with non-salt garlic herb seasoning. Put under the broiler until the top starts to brown. Then spread spaghetti sauce (I like Newman's own because it's not loaded with sugar). Put on a ton of cheese and the toppings you want. Put it back in the oven but this time on bake. When the pepperoni is all crispy it's ready. SO GOOD!

Here in Quebec, the cheese always goes on top of the other toppings. It strikes me as very strange to do otherwise. Give me brown crispy cheese any day!
That’d be a lovely place to just park and stay. I could wake up to that everyday. Also, that pizza looked awesome. One baby tip: when you toss it, use the top of your hands and the tips of your knuckles to toss it. You pop your wrists. Buuuut with that said, yours* looked so good. *had to edit the word, my autocorrect had it as “you’re”
For best pizza dough, I have used advice from what Ooni recommended. If you like rolling, roll the dough, if you like tossing it, toss the pizza. I have had better luck holding it like a steering wheel and rotating my hands around the outside edge of the dough, letting gravity do the stretching for you. It also makes it incredibly easier having room temprature dough, and you can leave it out at room temp for almost all day. I usually do that, and then the dough is much easier to stretch out and form to your pan or etc. Detroit style pan pizzas may be easier to cook with your oven setup. Still the best way to cook better pizzas is to make them more often 😊 , it leads to more delicious results. I absolutely love your content in the truck, thank you for all your hard work.

used to buy that paper you made your pizza on until my wife found this stuff that looks like its made from carbon fiber and it copper colored. You reuse it as many times as you like and as soon as you pull it out of the oven or off of a grill it instantly cools off and you can grab it with your bare hands. I wash it immediately, fold it, and put it up until I need it again, I wished I knew where my wife bought it from. I will find out and send you a roll if I can get a p.o box. We love your content

To spice up the pizza and add a little more flavor, I would recommend putting some dried red pepper and even some Cajun seasoning on it before cooking it. That way it bakes into the cheese and sauce.

I feel so sorry for you. You must be very lonesome being by yourself and not having someone to share this life with. For years my wife and I shared hundreds of adventures together. Yes we have been to Alaska but also to many other places all over the world. We are both in our late 70's now and live on our ranch in central Texas. My wife is confined to a wheel chair now so we don't do any exploring anymore. We do watch videos of our travels and enjoy that very much.
