    Medium heat with fast stirring without double boil is good. I've tried. Just sharing 😊

    I don't put caster sugar & reduce the palm sugar to half. And the sweetness is just right.

    Edit: They kaya turned out fantastic, although a bit too sweet for me, I might just use less sugar next time. I didn’t need to blitz the kaya at the end, mine was completely smooth. Thank you and cheers!

      Tew Siew Biuy there were no lumps in mine, it was smooth from the beginning, but probably due to me lowering the temperature when I added the eggs. I gradually increased the heat until medium and stirred for what I think about 15 minutes give or take. Wonderful recipe, you should try! But please decrease the amount of sugar
      Edit: I made sure that when doing the double boiling method, the top bowl didn’t touch the water below, only the steam was used to cook the kaya.

    Initially was using another person recipe but then the egg mixture is still not smooth after 2hours. ~T_T~ was finding solutions and your video pop out. the hand mixer idea really saved my day, thank you very much. Will try your recipe in next round ~!!

    You did it wrong way and cheat at the end. Over heat and not stir enough.

    The texture of the kaya is a bit rough. I think it was due to the temperature of the heating, need to be minimal, for longer period of time. Or was there any other reason?

      chong simon you are right, the top bowl of the double boiling shouldn’t be touching the water
