I just made srikaya with this recipe. Only I use 3 duck eggs and 2 chicken eggs, the egg yolks with a little vanilla and extra pandan leaves. The result is smooth and very fragrant. Thank you Kathrine.

I usually store my homemade kaya jam in chiller. It will last longer. You can divide the jam into several small jars, and take out one jar from chiller the night before you want to use it.
mine too, and I followed the ingredients exactly as written in the description box. even the coconut milk is of the same brand. And also the the caramelized sugar hardened and stuck to my non-stick pan when I poured in the coconut milk, making it hard to stir. Not sure why hers (in the video) is still liquid. I think that's the reason why mine curdled, not being able to stir well.
I supposed to make this kaya a moment ago with d fresh coconut milk which i bought it in wet market but unfortunetely d milk ald got rotten smell,i bought it around this 4pm & immidiately i put it in d fridge, i strongly feel that the guy sold me no longer fresh milk anymore, actually i want him to give me a fresh squeezed but he insist that its fresh n js packed it, well i just my bad luck to buy fr this shop next time surely i ll avoid to buy fr this dishonest shop. Take my Rm 4,4 as my donation to him☹️ Tomorrow i ll try to make this recipe with instant coconut milk , hopefully i can make it

I've made this kaya several times and I would say the secret to make it smooth is to keep stir all the way until it's done.
