  • Marble Butter Cookies | My Favourite Butter Cookies (Part 2) - First of all, wishing you a Happy Blessed New Year. This is the first video of the year. I made a video on ‘My Favourite Butter Cookies’ exactly one year ago, and the response was amazing. However, I got a half the people commented that their cookies went flat in the oven. Here I’m using the exact same recipe, except half the batter I added a couple of cocoa powder. The cookies seemed fine in the oven. I believe the key is to cream the butter and sugar well until fluffy and pale. Again, these cookies are amazing, crispy in the outside and melts in your mouth. I hope you’ll be inspired or have more confidence in making these cookies. Enjoy!

    Ingredients:
    113g [½ cup] unsalted butter, softened
    60g [¼ cup + 1 tbsp] fine sugar
    1 egg yolk*
    1 tbsp heavy cream
    1 tsp vanilla extract
    ¼ tsp salt
    125g [1 cup] cake flour
    16g [2 tbsp] cornstarch
    For chocolate dough:
    9g [1¼ tbsp] cocoa powder, sifted
    1 tbsp heavy cream
    ❤️*for eggless:
    2 tbsp of yogurt or heavy cream
    piping tip: 1M
    Instructions:
    1. Preheat oven at 170°C/340°F.
    2. In a large bowl, mix softened butter and sugar until creamy, fluffy and pale. Make sure it is only softened, not melting stage. Scrape the bowl occasionally.
    3. Add egg yolk*, cream and salt. Mix until well combined.
    ❤️*For eggless, replace egg yolk with 2 tbsp yogurt or 2 tbsp cream. (Excluding the other tbsp of cream, so total 2 tbsp of cream here)
    4. Sift the flour and cornstarch in 2 batches. Fold in until the flour disappear. Then sift the remaining. Fold until incorporated.
    5. Divide the dough in half.
    6. In one half of the dough, sift the cocoa powder. Fold until well incorporated. Add a tablespoon of cream. This is so that the dough is softer, not too dry, to ease the piping later.
    7. Using piping tip #1M.
    8. Pipe on a pan, greased and lined with parchment paper.
    9. Bake in preheated oven at 170°C/340°F for 16-18 minutes.
    10. Cool the cookies completely before serving.

    Hey Fiona, I've done a couple of cakes from here and they've turned out very well. I wish to tell you that in my spare time, I like to watch your videos. I like the way you make the prep, bake and slice the cakes and even the way that you line the tins with parchment is awesome. What I love most is that you are a neat and clean baker and a SILENT one. Your hands are always neat and clean. Nails are clean too, devoid of nail paint and no jewellery on your hands. And I love and appreciate that because I believe that when working with food hygiene is a prerequisite and good clean workstation. So I love your videos for following that protocol.     They turned out beautiful Fiona, I've never made them in marble version, I'm sure they're even more delicious than the vanilla ones! I love the eggless version too, they are absolutely identical to the egg ones! You always make amazing recipes

      Thanks for your kind words, Valentina. I also think your recipes are amazing too as always. If it's ordinary marble cookies without the piping will be a lot easier, but since this a piping work, we will need a lot of pressure to push both dough out at the same time, else the swirl won't form nicely, this is what I feel challenging ☺️💞💖

    Happy New Year. Thank you so much for your first butter cookie recepi. I just tried it today. It taste great. I didn't used heavy cream cause I don't have it at home today. So I changed it to milk. It turn out awesome. Will try this Marble Butter cookies another day. Thank you again. 😊🌺

      Perhaps they have over mixed the dough after adding the flour.that might cause it to flatten after baked. I even used plain flour cause that's what I have in my kitchen.

    Remember to refrigerate for 30 minutes(or freeze for 10) before you put it in the oven.
    Most pastry that has butter in it you have to do that in order to make sure the butter doesn't melt before the pastry starts baking.
    If anyone has had these cookies "melt" or "deflate" it's because of that.

    Oooh, looks yummy. Approx how many cookies does this recipe make? It would be fun to play with flavors here. In the vanilla batch adding some orange zest and in the chocolate batch adding some peppermint would take these to another level. Think I'll give that a try. Thanks for the recipe...

    Just made these today, the eggless version, and they came out well, though lacking sharp definition, and I expect that's because they're eggless. I might try a combination of aquafaba and NoEgg™ next time to see if it provides better structure. I used a European butter (Lurpak), which is low in moisture, and the cookies were delicious. 'Were' because they got devoured shortly afterwards. Thank you for going through the trouble to make eggless versions of your recipes. Every one I've tried so far has been a hit.

    Oh wow, i'm on it tomorrow. These look so scrumptious i just have to have some asap. That is such a clever idea separating the mixtures and wrapping then in cling film ready to pipe. I have never seen this, and cuts down on a lot of mess too. I'm not the tidiest baker like you are Fiona, my kitchen looks like a war zone when i'm baking.       You can do the same thing with your buttercream frostings to get a few different colors/flavors as well. The 1st time I saw that method used was in a frosting video. I too love the look and less mess it creates. Good luck if/when you try it. Happy baking...

      Bake for another 2-5 min. The time range given is just a guide because every oven seem to be a little different especially for cookies.

      Ghee or margarine, not oil. If you don't have cornstarch, I guess just omit and replace with same flour

      Hi dear. Firstly, don't reduce the sugar. Secondly, you can add 2 additional tbsp of flour to the dough to ensure it won't melt. Hope it helps ☺️

    Hello maam.. I made eggless version.. My cookies spread more.. Should i freeze the cookies before baking

      @@poojaaggarwal4481 If that's the case, you can try add 2 more tbsp flour for your next bake. Don't freeze, maybe just chill in fridge will do. ☺️
