I just shred them up in a wood chipper and use them as mulch. I guess you could also use them to build a Swiss Family Robinson home and boat and boardwalks too if you wanted. :)
You need to sort the seeds according to size first. Once you have a bunch of near identically sized seeds, you can feed them through grinder on a very loose setting where it just cracks the seeds open. I tried doing this with a wheat grinder once and then winnow the seeds after that and got an OK yield of shelled seeds.
Try setting out a bird feeder just far away enough from the plants that it will distract them. My Granny kept hers at the opposite end of the yard to keep them out of her gardens.

Gonna use this method next year. I used my thumb and got a bunch of stuff under the seeds so it made it tougher to sort that out lol.

So the birds get to mine early and I never get a full head. I have to cut them down before they are mature enough

The birds get a few. But I usually cut them (the sunflowers) before they get too many.
