Hello again. Can definitely relate as a Colombian immigrant myself living between NY and NJ. I remember not liking some of the dishes my mom made that included liver, tripe, chicken hearts as kids. I still can't stand tripe but the rest I'm good with. Colombian food is becoming more trendy around Jersey as well, but nowhere near what Korean is at. Speaking of which, I often find myself having dinner or lunch in this spot called Kimichi Mama is Asbury Park. You should make your way to Jersey next summer. Plenty of food spots up your alley...especially in Edison.
