I have only ever had alligator fried, but I would describe it's texture as more scallop-y. It's tender but has some bounce. And I know it is overused but it tastes like very tender chicken, but you can still tell it spends most of its time in the water. Almost like a more mild shellfish than scallops.

Frog legs are similar, but more tender. But yeah, like chicken mixed with mild fish.

@@MacGuffinExMachina That's what I've heard! I guess frog legs are the "weirdest" thing I've ever eaten, but to me it tasted like a chicken that spent some time swimming around some fish, lol. They weren't bad though! I quite liked them until I picked two up and kind of.. bounced them around a bit - then I just felt bad for the dang frog.. 😂

    Howdy from Texas.
I'm sixty one years old and have lived in Texas my entire life. I've eaten gators, racoons, rattlesnake, frog legs, crawfish, grass hoppers, crickets, June bugs, meal worms, whole soy sauce candied crabs, Shark, alligator Gar, long nose gar, and many other unusual things.
I'm a lifelong foodie and if I'm pretty sure it ain't going to kill me. I'll eat it at least once.

Unlike croc, gator meat has a tougher and larger deposits of fat due temperature changes in US states (80- 100+ in Summer and down to low 20's in Winter).
This fat doesn't cook as well and retains a very fishy/gamey taste even thoroughly seasoned and cooked. That's why they try to trim it well and later use those cavities for different stuffings. If you don't like the cheese stuffing, a good alternative in my opinion is some rice withe herbs and spices of your choice or some good cuts of onions, garlic and peppers.

Boudin sausage stuffing is probably my favorite of all they cooked. Boudin is made with rice and bits of ground pork. It's very nicely spiced. Just delicious.

I've eaten alligator tail, rattlesnake nuggets, grizzly bear stew, and common things that I find weird, like bullfrog legs, escargot, squid legs, octopus legs, as well as scallops, mussels, and raw oysters.
I'm surprised the back and shoulders don't have more meat, since they're such powerful swimmers and can gallop on land at 35 miles per hour.

gator is probably the best example of meat that really has to be cooked properly. It can be fishy, muddy, rubbery, OR tender, sweet, and one of the best meats you could ever eat. There definitely is a fine line when cooking gator. Also, the tail is what most people eat and know as far as gator meat goes, but the legs are totally different and so much easier to cook right, in my opinion. Definitely a lot more tail meat though, but that's a 5050 shot if you don't know how to cook it.

Try getting one of those thermal mats that go over smokers or grills. It keeps the heat in. We do it during the winter when we smoke pork all night. It helped keep the heat in during 15 degree fahrenheit.

Many decades ago, when I was a kid, my father had a second job in a local restaurant, and he would bring home many odd things like frog legs, and sheep's brains, which I would not try, but I did partake of black bear and some type of whale, the species I don't remember, and both were quite tarty!

Gator, rattlesnake, turtle, snails, crickets, geoduck (gooey-duck) and bear are the most interesting things I can think of having eaten. Bear is the only think that tastes bad. P.S. Boudin is a delicious Cajun pork and rice sausage, so that stuffing is just more meat.

Being an Aussie, I've tried what foreigner would call strange/weird like kangaroo, echidna, snakes & croc. I found out that also being allergic to seafood, I'm also allergic to croc & snakes. One of the most unusual meats is the goanna (monitor lizards). Goanna is edible, but tastes like sh!t. I'm a bit old school, I love rabbit, pheasant. Not a big fan of duck or goose or swan. One of my favourite things to eat is Ox tongue, cooked like corn meat (boiled for a long time, with veg & spices). You can't get any better than fresh Roo tail on a camp fire. Roo tail stew is pretty awesome too.

The last Gator I had was one that I hunted and harvested myself. It was 150 pounds 10 .5 feet long
The tail meat is usually what you will find in the restaurants here in the United States. And tail meat is legit good. But the real prize for Gator hunters is the big cheek meat on the jaw of the gator. That one they BBQed in this video is lovingly referred to as a little breakfast gator. So it's cheek muscles were relatively small. But on the bigger adult gators that cheek meat is the size of a small roast.
You can cook it just like a roast or slice it thin bread it and fry it. Using seasonings of course. The leg meat if you cook it low and slow for a few hours or cut it up and put it in an instant pot pressure cooker or just a regular pressure cooker. tl. The leg meat will become tender enough to remove from the bome and either become an alligator chilli, Alligator sausage, with a little minced Pork added, or gator cakes.
Getor meat is pretty good if you know what you're doing.

Gators are pretty sedentary. They have very powerful tails to move in water, and help them do their Death Rolls. They have a powerful bite force to catch/kill their prey. Otherwise they have no need for strong, bulky muscles. They are Ambush Predators.

My recollection of eating gator was like a deep fried chicken nugget, I had second thoughts if it was chicken I was eating. Can’t think of eating anything “weird,” maybe unique to the region like crawfish from the local creek or venison even though this is likely something that other areas are able to get their hands on these sources of protein.
I’d say the “weirdest” food we’ve had in the states but apparently really good is Rocky Mountain oysters, deep fried Oreos, (proper from the South) Biscuits and Gravy, Chicken and Waffles, etc. Then again, we Americans think Root beer is normal and most of the world apparently uses it as a flavor for medicine lol 😂

Honestly gator tastes of what you do with it with just that tiny hint telling you it’s not chicken or beef. It’s a pretty neutral flavor.
Your kids aren’t sleeping very well that’s why they are so tired. You need to finish the renovations quickly to get them settled.
I know because I barely slept during hurricane Milton because so much noise. I barely sleep during hurricanes because I constantly have to check my house for damage or stuff I know I need to do once the hurricane blows out. During most days I’m fine just during hurricanes I am beyond irritable because I’m so tired.

Had fried gator and grilled gator. Both are great but the main difference is texture. I agree with another post that said it has a texture similar to a large scallop. It is a unique meat. The texture is a cross between pork chop/tenderloin, and firm scallop and a slight texture of firm chicken breast, almost like a slightly overdone chicken tender. The gator is surprisingly neutral with flavor so it takes to seasoning well. If you didn't know what it was, you would know it was something different and would think it was almost a chicken breast stuffed inside a pork tenderloin. It is really good. Weirdest thing I ever ate was a worm in tequila. Aweful..... like chewing a very fibrous squishy piece of alcohol infused gum. Don't try it.

There's no need to have a smoker shipped to you. You can Google how to make one & how to use it. The meat & wood can be what you have in your area. In the beginning this was poor people food. They used what they could get their hands on. That's why different places used different wood. They went to the forest close to them. I suggest you experiment with what you have in your area. Good luck
