Savoring Spring: Peas soup with pouched egg!!!

- I have just finished a Rick Steves tour in the Basque Country, and one of my favorite food stops is at a small family run winery called Lezaun, where they always cook for us what ever they have fresh in their garden. This time they prepared the most delicious Peas puree.
I love Spring Vegetables, and the peas this year are incredible in the market, so inspired by Lezaun Winery, we are cooking our version of it. Easy, fast, healthy, fresh.... simply Perfect!
Ingredients:
For the Pea Puree:
- 1 chopped shallot
- 3 tablespoons of extra virgin olive oil
- 4 cups (about 1 liter) of water
- 1 pound (about 454 grams) of fresh peas (frozen peas work well too)
- 1 clove of garlic, sliced
- Salt
For the Poached Eggs:
- 4 fresh eggs
- Water
- Cider vinegar
To Top the Dish:
- 8 thin slices of ham
Instructions:
1. Prepare the Pea Puree:
- In a saucepan, heat the extra virgin olive oil over medium heat. Add the chopped shallot and garlic, and sauté until softened.
- Add the fresh peas to the saucepan and cook for a few minutes until they begin to soften.
- Pour in the water and season with salt. Bring to a simmer and cook until the peas are tender.
- Once the peas are cooked, remove the saucepan from the heat. Using a hand blender or food processor, blend the mixture until smooth. Adjust the seasoning if necessary. Keep warm while you prepare the poached eggs.
2. Poach the Eggs:
- Fill a large skillet or shallow pan with water. Add a splash of cider vinegar to the water (this helps the egg whites to set).
- Bring the water to a gentle simmer over medium heat.
- Crack each egg into a small cup or ramekin.
- Using a spoon, create a gentle whirlpool in the simmering water. Carefully slide each egg into the center of the whirlpool.
- Poach the eggs for about 3-4 minutes, or until the egg whites are set but the yolks are still runny.
- Once done, remove the poached eggs from the water using a slotted spoon and drain on a paper towel.
3. Assemble the Dish:
- Divide the warm pea puree among serving plates.
- Top each serving with a poached egg.
- Garnish the dish with thin slices of ham.
