"Dutch" Apple Pancake | Blind Cooking | Slow Sunday Morning

    Join us as Katie, Devin, and I (Nicole) prepare one of our favorite weekend and special occasion breakfasts--a classic "Dutch" Apple Pancake. Evie joins us after all is made and complete! During this video, you can see how I peel, core, and slice apples pretty much the same as sighted people, with the exception of some safety techniques such as curving my fingers to avoid cutting the tips of them, but also to use as a guide for each slice I make on the apple. I feel the cutting board with my hands to make sure I've not missed any apple slices when moving them to the bowl. If you have a recipe similar to ours, tell us in the comments below!     Here are the details of the recipe.
    "Dutch Apple Pancake"
    Ingredients:
    5 medium Granny Smith apples
    4 Tablespoons butter
    Batter:
    5 large eggs
    3/4 Cup flour
    3/4 Cup Milk
    Topping:
    4 Tablespoons butter
    1/2 Cup sugar
    2 Tablespoons cinnamon
    Preheat oven to 500 degrees F.
    Peel, core, and thinly slice apples. Melt 4 Tablespoons butter in large 500 degree F tolerant skillet (we use cast iron). Sauté sliced apples until tender. While apples are cooking, beat eggs, then add milk and flour. Continue whisking until smooth. Pour over sautéed tender apples. Move to oven. Bake 20 minutes at 500 degrees F. While baking, melt 4 Tablespoons butter and make cinnamon-sugar mixture. When 20 minutes are done, pour butter over pancake and top with cinnamon-sugar mixture. Return to oven for 5 minutes at 500 degrees F to caramelize cinnamon-sugar mixture.
    Let cool to safe eating temp, serve, and enjoy!

    I've made Dutch Baby's before and we like putting sliced bananas and sliced strawberries, dusted with powdered sugar. But this is different. We will have to try this some time. With the continual, gradual decrease in vision, I cook very little any more. Nice to see you and your family pitching in together to make this. It looks delicious.

      Oh man, SS you need to get lined up with some independent living skills training for your vision loss. I mean, if you hate cooking, I get avoiding it and using vision loss as a reason, BUT, more often than not we still have a need to be able to do all of this independently. They can teach you safe and effective methods to cook, bake, measure, cut, recognize done-ness and so on without the use of your residual vision.

    Two words for you guys: VEGETABLE. PEELER. LOL! Also, YUM. I'm going to have to try this. It's similar to one I make sometimes called a German pancake, aka puff pancake. Yours has WAY more apples than mine, though.

      BWAHAHAHHAA. We HAVE a vegetable peeler but we’ve never used it for Apple’s! LOL. You’re so stinkin’ cute!! Thanks for suggestion. I’m seriously all about a peeler/corer but Devin says they take too much of the actual Apple. 😂. It’s an ongoing discussion.

      LOL I would have used a vegetable peeler too. I am wondering if what you make is another name for what I know as Dutch Baby. I put a batter in a hot buttery skillet and the edges puff up all around the sides. We fill with strawberry and banana slices, dusted with sugar or sliced, sugared and cooked apple down till very tender and put some in the center.

      YES! I read up on the history of it because I said to Devin why is it called “Dutch”? Lol. Anyway, I think it’s a similar concept, this is pretty much on pointe for the Dutch Apple pancakes they make at the original pancake house (walker brothers in Chicago area) and some other restaurants and diners claim.

      I think a peeler/corer would be neat, but my problem would be storing it and I don't peel apples enough to justify it.

      Devin definitely cooks MORE at our house. He loves cooking. I like cooking but I don’t much care for the intense prep meals that take forever to make and are gone in two seconds. 😂
