I made just the chili last week for a chili cook-off this past weekend. As I was heating it up the morning of the cook-off, before putting it in the crock pot to transport, I decided to add about 8 ounces more of tomato sauce, since the chili was a little thick. I also added a 15 ounce can of chili bean pinto beans (gasp!) Out of 8 chilis submitted for the cook-off, mine came in first! Great recipe!

Whenever I do cheese fries, I do.....fries, grated cheese, chili, queso, then sometimes sour cream & hot sauce. The chili melts the grated cheese & 1. Keeps the chili from sogging out the fries & 2. Helps hold everything together so you get more chili with the fries....kinda like nachos with chips!
Double fry is called blanching if you ever hear the term, also Instead of pulling the fries out every time Sam put another one in the cutter and it will push out the first potato a tiny bit of cooking oil might help them go through as well on the grate.

Looks really great. Even as a Texan, I like beans in the chili in some dishes like frito pie or with cornbread. With fries or nachos though this looks perfect.
The reason you prebake them at lower temperature is to get all moisture out. When frying them at high temp from the get go, they would be seared and fluids wouldn't be able to get out. The result/reward of getting the moisture out in the prebake: crispieness.

It's a family favorite. All I ever watched was Sam the cooking guy and Good Eats, all day err day!

Yes, this is Mexican Chorizo which is fresh sausage made of pork or beef with spices. It's raw and must be cooked. The chorizo in Europe is Spanish Chorizo which is in many cases cured and smoked.

Yeah that’s what I do sort of except I dont use hot sauce I use chipotle mayo. Blends better, but hot sauce also works.

Blanching means cooking very briefly in *boiling water* though, I'm pretty sure. This is double frying.

Have you tried coating them with corn or potato starch? They only need one shot in the oil and turn out really crunchy

The chorizo you used is ok but you should really find a local hispanic store and get some real homemade chorizo The difference is AMAZING
I make my own (about 3-4 lbs every couple months) and it is much better than store bought
