To absorb the oil off the blade so he don't have to sand long periods to remove the oil. Then you think why use oil and not water. The reason is water hardens steel to fast and causes cracks if not done properly. Oil is how knifes get made mass produce cheaply. Japanese knife makers use water but the technic is not shown on youtube
There is a number of reasons. Not being rude it would be easier if you just Google the reason why. It will take a couple of hours to explain the whole reason
