      *What is the Gospel?*
The true gospel is the good news that God saves sinners. Man is by nature sinful and separated from God with no hope of remedying that situation. But God, by His power, provided the means of man’s redemption in the death, burial, and resurrection of the Savior, Jesus Christ.
      Ephesians 2:8-9
For it is by grace you have been saved through faith. And this is not your own doing; it is the gift of GOD, not a result of works, so that no one may boast.
      Romans 10:9

Made me hungry for pancakes. I love the crispy edges too. My preference is for supper thin pancakes....almost like crepes. Clarified butter a great tip. And the lemon zest would add some brightness I think would be really good.

This is how my mom makes pancakes. I never used to see how she's make them for breakfast when I was a kid because they'd be plated by the time I got downstairs. It took me a long time to get the same result as an adult.
Anytime I'd ask her what I could be doing wrong she'd just say use more butter without further details.

Curiosity got to me. I made a quarter recipe. First I clarified butter which is a pain but cheaper than buying ghee. The only change I made was to reduce the salt. When I measured out the salt it was just too much and I’m glad I did. This must be a typo. The amount of baking powder makes the batter instantly billowy and full of gas. The first one cooked up wonderfully with great crispy edges. It’s surprising light and airy considering all the fat (I did not top it with more butter). As I kept cooking the pancakes got less and less airy but still a great contrast between the very crispy edges and the super light interiors. Halfway through I ran out of butter and I cooked the next in olive oil. Not nearly as good. The last bunch I cooked without oil in a nonstick pan (my kids don’t like the “hard edges”) and they were not good at all. They tasted very eggy and had a very displeasing flabbiness. It made 10 small-medium pancake so the full recipe will feed a small army and require a crap load of butter to fry up. I did not taste any lemon and wonder if it’s really necessary. This recipe was clearly designed to be fried up and only fried in butter and for that reason I probably will leave this low on my pancake list. And since the batter deflates quickly I don’t think cooking them one at a time is a good idea, especially if doing the full recipe. It is very delicious and I would gladly eat these pancakes if someone made them for me.

One thing said I'd love to understand more is if it's the over mixing or mixing too hard that nullifies the effect of the baking powder. Jake said mixing too hard, but I've always been told it's over mixing though his mixture was smoother then I would have expected.

A couple of things. It’s a pretty loose batter and the liquid inhibits gluten formation. And the batter sits around while he makes each pancake so by the time he is on the 2nd and 3rd one it’s had time to relax.

This is how my step dad made pancakes when we found him. He started using vegetable oil, then moved to butter when he came to Wisco.

This has always been my preferred way to do pancakes. Also skip the lemon zest and just do cultured buttermilk.

This dude is a fucking hero. This is how pancakes should be made. Those fluffy virgin syrup soaking pancakes are no good. Give me these crispy boyz all day!

Is the butter he served on top of the finished pancakes clarified butter as well?

This is super similar to the way my dad makes them. Super crispy lots of butter, but we make them real thin. In my opinion it’s the only way to eat pancakes the fluffy ones are okay compared to these!
