One of the main reasons some cinnamon rolls taste SO much better than others is the cinnamon itself. I got a named brand cinnamon mix. It turned out so great I emailed them and asked why the cinnamon tastes different than from what I have. She replied that it is no trade secret. You have cinnamon in your house. They use cassia cinnamon. So I ordered some. WOW. I was so eager to try it I got out a bowl and dumped some sugar and cinnamon in it and made cinnamon toast. Cassia cinnamon has a very robust flavor and makes your dishes stand out. I no longer buy that store cinnamon in a can.
Cinnabon uses Karintje Cinnamon and trademarked their Cinnamon as Makara. So they basically use a Trademarked version of Karintje Cinnamon. The cinnamon comes from West Sumatra province in Indonesia and is more flavorful and robust than ordinary cinnamon. I purchased some Korintje Grade AA Cinnamon and everyone who has ever tried my Cinnamon Rolls say they are Identical if not better than Cinnabon's rolls. With that amount of cinnamon powder, no wonder they are quite expensive. Eating cinnabon right now😅. I got addicted with cinnamon rolls lately when I first tried one from Starbucks. For those who asked abt the recipe.......It's cinnabon, a famous international chain bakery !!! Why wd anyone think that they will release their"recipe"????
I never knew wheat could cost so much until I walked into a Cinnabon and immediately left for a cheaper local spot. Very rare for a local store to cost less than the corporate one. And they were also bigger and not undercooked. I ate Cinnabon as a kid because they had it in the movie theater, the doneness was either perfect or dough ball and it was about a 25% chance of getting a dough ball covered in cinnamon.
So what is the price? I saw some in S & R last week. Half the size and they wanted 40 pesos. When I make them, I add sugar, walnuts and raisins to the filling. My glaze is also made with cream cheese (optional) but always with a good amount of glaze. All of this obviously will add to the cost so what you see here and what you are buying is cinnamon bread.

Ms Brusseau is a professional baker so she should damn well know not to use margarine. In order to work with butter, you have to have it at a certain designated temperature.
