    Knowing how to fish, hunt, process your own meat and taking time to thank the Lord for your bounty! You were raised right and CUDOS to your parents! Can also see why cooking seems so natural to you. Was raised on a farm in the Midwest. We also processed our own meat. We had a big old meat grinder with a hand crank bolted to a 2X10" plank. You are going to do very well on your channel!

      John D thank you! I owe my parents a lot of respect for not cutting corners on the way they do things and raised me: I’m glad my grinder is electric. Lol. A hand crank sounds like a lot of work!

    I'm sure you have a preferred way of processing venison but let me share a way an old mountain man told me and my family loves it. #1 quarter your deer into a cooler #2 soak it in saltwater and ice the first 24 hours #3 soak it in freshwater and ice the second 24 hours #4 drain the cooler and for the next 5 days keep it covered in ice. It will be tender and not gamy at all. I tested this method with an old buck that was tough just quartering it. It was very good after processing it properly.

    I'm just gonna say it, you're a talented person! You kill it, clean it, butcher it, grind and spice your own meat, and cook it all yourself! I grew up in rural Idaho on a big farm and know thousands of people and I bet only a very small percentage of them could do it all start to finish. And that's men and women! Good for you!!! I bet your parents are very proud!

    Do you ever wrap with freezer paper with your meat laid kitty corner? It tapers off with the angled end when finished and you can easily adjust your tail of paper so it doesn't slop out on the side. Totally with you on wild meat philosophy; we never hit the meat section in the grocery store either. Florida has more diversity that Minnesota, so more unique treats for you guys. Gotta love those gathering adventures as the seasons roll around huh?

    They had hogs on Belfair but they were not welcome guest. They come in at night and root everything up. They also had fox squirrels. Real pretty all different colors and lots bigger than a squirrel. I have never seen them in any other place than Belfair. When I was a kid, my father was bringing me back from our snake ranch which was loaded with rattle snakes. About 3 or 4 miles north on 17 the traffic came to a complete stop. And here comes this huge hog must have been 600 pounds or better. He walked right up to our station wagon and set his head on our hood with big ole tusk. I could not believe it. Then he wondered off the road into the marsh at a slow speed, There was another big hog about 300 pounds that came up to our Hobie Cat 16 on little tybee. We were over there surf fishing for red fish. At first I thought it was a dog and the closer it got, I said that is a damn hog. He came up and started eating everything we had and drinking our beer too. When we left, the hog wanted to go with us, I felt bad as he stared at us as we left. I was back surf fishing within the week and I heard a high power rifle go off, it was like the bullet struck me because I knew somebody had killed the poor pet hog. I guess the SOB went around telling everybody how he killed a wild boar, but in truth he killed somebody's pet that got too big for them. RIP piggy. We used to tear up the redfish keeping up to 15 pounds and tagging over 350 fish between 25 and 40 pounds, but I never had a tag returned. We caught one tagged fish that had been tagged on the SC/NC boarder. They think a hurricane blew him down the coast. DNR killed red fishing in the surf.

      DAVID HENDRIX poor pig :( I had a pet wild boar I found alone in the woods when he was only a few days old. I bottle fed him for weeks/months. He slept in my bed and went everywhere with me even fishing on the boat! The only issue was he never grew. All of those months and he never broke 5 pounds. As it turns out the poor guy had dwarfism and died shortly after from organ failure. One of the worst heartbreaks I’ve ever known. I still miss him to this day

      Biggest Cobia we caught was 61 or 63Lb. That is a funny story. My friend ex line backer for USC cannot stand eels. So I bait the hook with an eel and toss it over, the rod bends over and he basically tried to snatch the cobia out of the water into the boat and I heard a POW. I said WTF? So I am baiting my brothers rod and it goes off and we boat the monster cobia. Damn fish was jumping all over and about out of the boat and I said give me something to knocked it out, I got the throwable and held the cobia down and beat it with a wrench. I do not know what happened to the old billy club my father found in the stream. really sorry I lost it. So I start looking at the Cobia and I notice 2 hooks in the Cobia's mouth. Then I said that is my rig too. I said Harry, my brother caught your big cobia. That was on the old Savannah tower the ship knocked down during the night. That must have been one hell a lot of noise when they hit. It was a hit and run, they did not report the collision. Coast guard finally ran the ship down in another port. Our Navy towers used to provide great weather information, but Obama shut down that info along with Loran C too.

    • @DHKEYWEST1
      @DHKEYWEST1 4 ปีที่แล้ว

      @@CheyenneLeeBehrsin That tower you speared the Cobia, must have been off Jacksonville or in the Gulf. It just noes not look like Navy towers off Georgia.

    • @DHKEYWEST1
      @DHKEYWEST1 4 ปีที่แล้ว

      I see now, LA tower, that is why it quite did not look like any Navy towers off Georgia. Must have fished out of Venice. The Savannah Tower held so many cobia before it was knocked down. Cobia bread in the broad river. They have released baby cobia in rivers near the broad river.

    • @DHKEYWEST1
      @DHKEYWEST1 4 ปีที่แล้ว

      I see you speared the cobia the day Mel Fisher found the Atocha and 400 million in treasure. july 20. On the east coast most cobia would have migrated to off Delaware. Many moons ago i saw some where between 500 to over a 1,000 cobia at the Savannah tower in November. They were migrating back south. I only seen this happen one time.

    Hunting is just harder to do, unless you have big bucks like Ted Turner. I guess the best place I ever hunted was Cabin Bluff which was owned by Brunswick Paper and pulp. They use to trap the little piglets castrate them and cut their tails off so you knew which ones to shoot. The tract that sites on the GA/FL line must have been 10,000 to 20,000 acres. quail, deer, pigs, and turkey. I shot deer and turkey, but never was offered to shoot pigs. My father brought home several hogs. I think they have turned some of that area into residential development. That is what Union Camp did with Palmetto Bluff. They use to tie the turkey to the tree for their yankees customers to shoot. Now millionaires live on that tract now. Lifesaver family bought several lots in there. Have a great weekend.

    I also know the venison tenderloin taste like prime rib eating it rare cooked with butter and lemon on the grill, but I would advise putting it in the freezer for 3 weeks before doing so. It may not kill all the parasites, but it reduces your chances of getting sick. I would not take that chance with pork, because you are playing with fire with trichinosis eating it pink or bloody

      DAVID HENDRIX we always freeze it for at least a Couple of weeks before preparing rare :) and as for pork I make sure that it is WELL done. Even Slightly uncooked pork is scary!

      @@CheyenneLeeBehrsin Happy Cinco de Mayo!!! Cheyenne, we used to pack the deer on ice for several days before freezing it. Hunting has gotten harder and harder to do as the years go by. All that area where we duck hunted in South Carolina are now million dollar homes near hilton head. Nothing better than fried quail and dove with long grain 100% wild rice with grilled mushrooms and celery added. I gave up sitting in a 100 degree dove field with bugs chewing on you for fishing in the deep blue sea. Best dove hunt that I was on, there was a foot of snow on the ground.

      DAVID HENDRIX man you’re making me hungry! Shooting doves in the cold sure does sounds better than in the heat! I always let my deer age on ice for close to 2 weeks before freezing. They seem to taste much better and are a lot less chewy like that! Too sad about the development of the land :(

      @@CheyenneLeeBehrsin I left out one thing in our used to be Thankgiving and Christmas meals is pigeon peas. Old black women farmers used to grow them around Bluffton, SC. But when Hilton Head exploded, it took over Bluffton which used to be a little country town and now turned it into a Palm beach. I used to be able to slap the surf board on the dune buggy and 30 minutes be in the water surfing off sea pines, Now that would take 1.5 to 2 hours to drive. When I went to Bimini, I thought I find a source for pigeon peas, but the older women laughed when I mention pigeon peas. They said all the kids grown Marijuana these days, because the pigeon peas is too much work for them. They used to grow pigeon peas all over the Bahamas. I know they grow them in Haiti too, After the big earthquake a camera guy zoomed in on a little girl smiling away and when they panned down into her pot, she had about 20 pounds of pigeon peas cooking. I know people do grow pigeon peas around Vero to Jupiter, but not sure if they sell them. Down in Miami to Homestead, pigeon peas are sold at the farmer's markets. I think the growing season is different than ours. We used to buy pigeon peas in July and August. I think they are sold around November to February around Miami. They do grow similar peas commercially around Macon to Atlanta, but they do not quit taste the same. I been buying long grain wild rice out of Minnesota for many years. I understand whole foods sell it too, but I have not checked it out yet. I was sorry to see Lucky's Market fold, they were a great store. You would have loved hunting on Belfair Plantation. Tons of deer, wild turkey , black ducks, mallards, and Wigeon ducks that you would shoot, sitting under a big live oak tree. The plantation was over a 1,000 acres, now just wall to wall houses. Very sad to see all the old plantations cut up for houses. My grandfather had a large track of land in South Carolina that they rode on horse and mule carts to shoot quail by the 1,00's then come back in get in tails to eat dinner. Way before my time, I never made it there. I do have the GPS coordinates where the hunting club sat. Those were the days of good hunting. Now the hunting club is owned by a paper mill. That is like the fishing, best fishing goes back to the 1930's to 1950's They used to lay out bluefin tuna on the docks at cat cay. Hemingway used to bring in a lot of big blue marlin into Bimini. I was sorry his hotel burned down before I had a chance to see it. Over 1,000 pound sword fish use to roam off Chile back in the 1920 and 1930's. And 100 pound yellow fin used to be caught in the 1980's right off Miami beach. You ask Miami boat captains now and they say you must be talking about Venice La,

    Great video, what was the weight ratio of your bacon to ground hog? I process my own deer and hogs. I grind fat hamburger meat with my deer, about 20-25%.
    Hog I've used Jimmy deans to get some fat and stick together.
    Also, we use quart size plastic frezzer bags w/ 1-1/2 lbs meat flatted then wrap in frezzer paper. Keep up the good work

    Vacuum wrapping is the way to go (Food Saver or others) for keeping wild game fresh for YEARS in the freezer. It is also much faster than the traditional wrap method you did.

    A good amount of wild hogs where I live! Yes want to see you the sausage and gravey. Did the bacon come from the wild hog or store? Looks like your an awesome cook! Still can’t understand why people complained about your voice! Sounds normal to me!
