When my Dad makes Aloo Wadian we only use salt and turmeric as the spices. Like the other person said Wadian is already spicy and hot. We also only use 1 Wadi in the while pot and break it up. And we fry Wadi with oil, then we fry onions and put haldi, numuk and cover with water. We do not use any pepper even because Wadi is already spicy yaar. We do not like this spicy cooking, mild is best. :)

the wadian broght from stores are very spicey. I put no chillies in the gravy tomake it less hot.The smell of onions subdues the aroma of hing so why put hing in the gravy?
I agree. his recipes are all with high end ingredients. not even one recipe of his is by using low end ingredients. and this recipe would be so hot and overpowering that you will not get the taste of badiyan .
If you follow this recipe, you will get an uncooked/raw taste of tomatoes. Overrated chef. Minimize the use of onions, cook the tomato puree (fresh) until the oil separates, add the lightly fried wadi and raw potatoes and give 2/3 whistles, garnish with coriander.

this recipe will be so hot and spices overpowering that you will not get the taste of the badiyan. its futile to cook like this.

I saw punjabi authentic receipe..they did put ginger.. garlic ..tomato..
No good reciepe as the wadiyan were rock hard even after cooking for one hour! What a blunder from a well known chef!
