      My Cantonese mom saved the turkey carcass and made Jook every year after Thanksgiving. So good, filling and simple! Brings back such wonderful childhood memories. Thanks for the recipe, Flo.

    I have never heard of Congee before, but it looks so good. The concept of roasting turkey bones is new to me also, but I will be trying that out during the holidays this holiday season for sure! 😊

    Love the recipe for congee,(jook) , I just forwarded it to my sister in Florida , she always have lots of leftover , comfort food reminds me of rainy days and daddy’s jook, made with pork bones , Have a Blessed Sunday with your family ,

    Turkey jook is one of my favorite parts of thanksgiving! When I was young my mom used to make it so simple, Turkey, rice, salt and water. That was perfect! Then she started adding vege like carrots and celery to make it healthier. That’s NOT jook that’s turkey rice soup! Sigh she still makes it like that to this day. Anyhow thanks for all the tips, I never thought to roast bones again, it make’s perfect sense and the whisk trick is genius! I’m making the turkey this year so jook is going to be made the way I like it 😊.

    I don't know about anyone else, but I grew up eating day-after-thanksgiving congee with a handful of fritos on top. Yep. Fritos. Crunch, salt, texture. (I am not a fan of the fried donut thing, which my Mom loves). Of course, we had the green onions, sesame oil, pickled greens, etc. But if you have never had Fritos on it, give it a try.

    This looks like a very comforting and warming meal. I ❤️ turkey. I just got thighs as it’s dinner for one on TG. I might try to find a small bird to make this recipe post Christmas!

      Some butchers will cut the back out of a small turkey for you. My dad and I always got a whole bird (frozen) and had the butcher simply cut the legs off to give us a breast with the back and legs separate. That was much cheaper than just a breast and it gave us the back for stock or turkey salad. Imagine a straight line from the tip of the breast to the back just at the wings. Cut with a band saw, the butcher can easily do it.

    Leftover turkey for congee is the best! Especially when my mum make it on boxing day here in the UK with the leftover turkey, she adds some leftover pork, saga and onion stuffing which makes it so tasty!

    congee is a perfect solution for the leftovers in every party or gathering. If you are quick enough, it can be served before the guests leave the house.

    I still, have never made jook. Wonder if the family would like it, they like rice. And we certainly will have enough leftover turkey. My son & his girlfriend bought a 24 lb turkey for the four us 😉🦃🇺🇸 Thank you, I hope your Thanksgiving Day was beautiful 🦃😊🇨🇦

    Query: can you use the "porridge" function for congee? THX again for detailed video steps & info

      Yes, if you are making it with premade broth. The porridge function on my pot is 20 mins high pressure. I’m afraid that 20 mins isn’t going to create enough flavour from the bones which is why I’m suggesting 45 mins. (I never use the preset buttons as most of them are simply preset times for high pressure.)

      I used a standard cup but as I mentioned, the ratio is 1:5 or 1:6 depending on how thick you like it.

    Does the ginger fully break down in the pot? Seems like it is a lot but that might be because I'm used to only seeing a teaspoon or tablespoon used. I might just have to go get a regular turkey just to try this. I only bought a breast this year.

      The ginger is just there for the flavour and will not break down.

      Soy sauce adds a soy flavour that I don’t want here. In fact, it is rare you will find soy sauce used in traditional congee recipes.

      I tried adding soy sauce for flavor the first time I made congee. It tasted good, but I thought it made the color of the porridge too dark. I decided the next time I made it I would use salt, as I would prefer a lighter/whiter colored porridge. If I choose to I can add a drizzle of soy to my bowl. I have cured my turkey & will be smoking it today. Leftovers will be turkey sandwiches and MOST DEFINITELY this congee recipe. God bless you Flo! & you too Dude!
