- Want to know how to make reverse seared whole beef tenderloin on the pellet grill? This video is for you! We recently made a smoked prime rib that was fantastic, so I decided to use the same method and horseradish crust on this whole filet, and it was fantastic!
I’ll show you how to make my favorite horseradish crust to coat the beef tenderloin, and we’ll make an easy horseradish cream sauce to serve with the reverse seared whole filet.
This smoked whole filet was absolutely fantastic. Hope you enjoy!

Good stuff. Not that big a fan of doing whole roasts like that as opposed to slicing into steaks, but I did one once and it was good.

Only time I've messed with one of those was to try to make a smoked beef Wellington. Turned out great but quite a bit of work.

Why not put the mayo stuff on first then put rub on? Curious.
I have always felt like an oil based binder like mayo butter, dressings. etc acts like a barrier. The oils are extremely hard to penetrate. Seasoning before allows the seasoning to stick to the meat and then the coating....
Nice job. Maybe the best part was showing the mistake on tying the tail the wrong way...........but then fix it, it ain't that hard to take a few extra minutes to make it right.
True....looking back do you think it would have actually mattered....I was talking to my meat guy....we both didnt think it would have...except for presentation
