Mums are tough, whenever I veganize a meal for my folks, my dad is always very impressed, I sometimes think he’s more impressed by the fact that he likes it so much, but I’ll take the credit anyway. My mum on the other hand is a little tougher in her critique, but it’s always constructive.
Sadly my parents are super tough. My father is a "macho" biker type. When I veganize something for him he always likes the taste, but doesn't end up eating it. Thinking it will make him a "soy boy" or something. Social conditioning is such a funny thing.

They always end up wanted to eat whatever I make, but they still tease me over the plant based substitutions I make. I think they put on an extra show to make up for the fact they can’t deny we still cook up and eat delicious food.

Yes, I liked that too. They were kind but honest as well. The scallop pasta looked utterly delicious. I had vegan scallops in a restaurant a few years ago and couldn't work out what they were made from. I thought it might be salsify but now reckon it was probably oyster mushroom. Delectable.

Everything looked incredible, except the ganache. That was way too lumpy/mushy. Next time, try using a vegan creamer. Heat it up on the stove for a bit until it's simmering, then pour that over chopped dark chocolate. Let it sit for a minute or two, then mix until you have a glossy, smooth ganache. If you've never tried coffee rich non-dairy creamer, I HIGHLY recommend! It is perfect for chocolate ganache and such a good milk/cream substitute!

Sounds just wrong because most of us will be used to seeing water and chocolate destroying one another when mixed, but chocolatier Paul A. Young demonstrates how to easily make water-ganache to make truffles, decorate cakes etcetc.
Canned coconut milk works just fine. Just microwave it till it's hot and add chopped chocolate chunks. Stir and it's good to go. You can refrigerate it and it will set(on cakes) . No difference in taste ( I'm not vegan and I made that before... it was great)

Pro tip: pane cotto and panna cotta are not the same thing (and they're not pronounced the same) 😅 Everything in this video looks so good! Might have to try some of these recipes.

But here in Europe going to a restaurant isn't even an option and just seems completely absurd at the moment. Yeah in Belgium they are closed. Almost a year now (with a break of a couple of months between the waves). But most of them do take-away and they get financial support from the government. For some it's not enough, but it's better than getting no help.

I'm sorry, I know it has already been said, but this was absolutely ADORABLE! I love to see people try foods unlike the ones traditionally eaten. I have been a pescatarian since I was 15, but I often make totally vegan dishes and bring them to parties. My cousins throw football bashes every Sunday and I get shunned by most everyone, but my lovely pork loving father eats every bite and asks for the recipe every time like a damn parent SHOULD! Yes this warmed my heart.
This looked amazing! My one suggestion would be to microwave your chocolate in smaller increments to avoid it separating as much and becoming grainy. Try stirring every 20-30 seconds.
