    I am beyond happy that she featured yeung man cooking and rainbow plant life. I definitely have made several of their recipes. Not full vegan but choose to cook vegetarian/ vegan at home.

      I follow Wil and Nisha regularly, though the latter has dropped out for at least a bit. The Happy Pear is another to look at from time to time, though they tend to be a bit obnoxious in their video style.

      Why are you not vegan though? It's really easy and the feeling you get from not having to eat those innocent animals, it's so worth it. If you need a push, just watch 'Dominion' and 'Fork over knives'. 😊

    Yes! Definitely want to see more of Rachel on this channel. But also, I so relate to watching a lot of vegan cooking videos and cooking for others, but being super lazy myself.

    It is surprising that most Arab foods, especially Iraqi ones, are vegetarian. There are many Iraqi vegetarian dishes, such as potato broth, which is potatoes that we peel and put on a low heat with some chopped onions, garlic, spices and salt and cook on low heat with a little water and very little and then cook for 30 minutes And when it is cooked, we put 3 cups of water on it with tomato paste and let it cook until it becomes thick, red and a little watery, like curry chicken or something like that with white rice, cucumber salad and tomatoes... and another dish called lentil broth, which is lentils cooked until cooked with garlic. The peeled potatoes and the water become of a medium consistency. We put tomato paste, salt and any additives. We definitely eat it with rice and salad.. There are white beans that are cooked until they are cooked, as well as with tomato paste, garlic and salt, and it becomes a nice broth. We eat it with white rice and some salad. There are many vegetarian dishes in the Iraqi
    There is also another dish called upside down(مقلوبة), meaning that the food is upside down. It consists of fried vegetables such as potatoes, eggplant, onions and tomatoes, all cut into circles and fried. We fry them well and put them in the bottom of the empty cooking pot and half well, then put cooked rice on the vegetables and arrange well. We bring a large circular plate, turn the cooking pot in it, and we get a shape that looks like a cake, but it is a delicious salty cake of vegetables and rice, and we put some hot sauce or any kind of salad

      Your English was pretty understandable so no worries there. Most of us would probably be just as bad at speaking Arabic / Kurdish / etc. Those dishes sound pretty good though! The potato broth one with cucumber salad and tomatoes sounds really good.

    When you soak beans overnight, it makes a huge difference. Also, the water the beans are in have beneficial compounds. Looks delicious.

      You should toss out the soaking liquid for certain beans such as kidney beans since they contain a high level of a lectin known as PHA (Phytohaemagglutinin). PHA in moderate amounts can be poisonous and make you feel really ill. However for some other cultivars of beans such as pinto beans there's less concern of PHA than in kidney beans.

      well when you say it like that it sounds more proper to do as she did, so as they cook the beans only soak up the flavor of the healthy brine she do brew, ya knew? ;) or else if they get plump prior with just water, that ain't as flavorful, ya dig? 🤔 I don't even cook much these days but, yea, perhaps seasoning well the overnight bean soak is a good way to do too, idk 🤷‍♂️😌

    I love this! What a fun idea! I would say that with beans, the point of soaking is not just time, but can be to remove any contaminates or indigestible sugars that can cause discomfort. For me, the dry bean soak is the difference between a happy belly and a gassy evening lol!

    One dish that I believe is “restaurant quality” is vegan ricotta pizza! I love making spinach ricotta from tofu. It’s so easy! Also, sometimes I make a mock meat tomato sauce with some beyond meat or Trader Joe’s vegan meatballs. This recipe was actually inspired by Merle O’Neal!

    One thing I have done is get some spices and spice mixes. I just had elevated hummus toast. I sprinkled some za'atar on top and added a slice of vegan cheese and sliced cucumbers. I've seem hummus toast go for like $15 on menus and I made it in like 5 minutes.

    Great video, Rachel! All the recipes looked delicious. I enjoyed the honesty stating you rarely cook decent meals for yourself and that some of the recipes were not vegan but you changed them so you could eat them.

    A tip for the beans: In my country, we eat a lot of beans stew and we change the water 3 times when cooking, it boils we drain and boil again, etc. That makes you less gassy and doesn't cause any problems in the wc if you know what I mean.

    It really is amazing how the more you work at a recipe, the better it tasted. I made a from scratch focaccia bread and mushroom/onion scape/garlic soup and they were both so amazing. Your Friday recipe did look like a lot of work but also so tasty. Nice job!

    I like Pheasant June. I replace the chicken with jackfruit and tofu. I use walnuts, pomegranate molasses a medium red onion. I Sautee the red onion in a little oil toss in the jack fruit and tofu. I press the tofu for quite a bit of time and the. Tear it into bit size pieces. Add the minced up walnuts and water to cover. I will add 2 to 4 tblsp of pomegranate molasses and adjust salt to fit. Serve over rice.

    Yum.. I am lucky I recognized almost the flavours of the dish there. Vegetarian Oyster sauce is definitely something you should have in hand. It makes a lot of stir fry and fried rice just taste better

    What I also like to do when I’m in a cooking rut, or don’t know what to cook, I look at my Vegan board on Pinterest, and I do a random number generator for whatever number there is on my certain Pinterest sections (for instance, there are 65 pins on my Tofu and Tofu Marinade section) and I just let the number generator do it’s thing, and I make the recipe! This really helps, at least for me!

    my favorite are chickpea salad wraps and smoothies. Or a gourmet burger with eggplant, bell pepper, etc. Then a microgreens salad. Be Leaf Cafe has good food too. I like making my stroganoff - it's restaurant quality. Of course pho soup and gourmet mac n cheese or gourmet hot dogs or both together. What about a kielbasa iwth cheese inside? Yes!

    I just NEVER follow recipes and I feel quite guilty for it because I have a lot of cookbooks and recipe ebooks and they just remain unused XD I really have to challenge myself to actually try at least 1 recipe from each book I own before I buy the next one :D
    Also, I really like how the recipes you tried weren't in reality that complicated but the choice of ingredients and techniques made a massive difference in the final dish! Glad you enjoyed these new dishes that week!

    pro-tip on any indian dish with a gravy. that stuff freezes. Make a large batch, pop it in the freezer. And then whenever you want an indian meal, you can just prep your veg+ protein, and then heat up your sauce.
    We could make dinner every night the "right" way but I'm also realistic.

    It is too lemony because the beans cooked longer than it should have. The consistency is very thick making the flavors too concentrated . I love the brothy beans recipe, but soaking the beans is a key step. Alison Roman taught me how to make it

    I watched Yeoung Man Cooking ( Young* ) as well and I learned to make the Chinese noodle dish 🐇 Very delicious! 🐴
    He told me yes he did play around with words and intentionally have it as Yeoung and it has to do with Young 🐇

    Question: How spicy is the Tikka Masala? I love the aromatic qualities of Indian food, but can't take the spice. And, I'm afraid that the flavor would be very different if I left out the chilis... Rainbow Plantlife calls it "baby mouth." That's me!

      If you cut out the white part (the "placenta" of the pepper) and remove the seeds by slowly rinsing the interior of the peppers, it should reduce the heat down quite a bit. You could also use mostly bell peppers / capsicum with only a small amount of jalapenos / serranos or leave the spicy peppers out altogether.
      And hey you might have baby mouth but at least you'll save on your laundry bill! I'm basically a leaky faucet whenever I eat spicy food but I love the heat (don't love the looking like I just stepped out of the shower though).

      totally legitimate to not use dried chilis if you wanted to. I agree with the person below you can use bell peppers as well. The only thing i'll say is kashmiri chili powder is actually pretty mild but you can also just use less. Not every Indian person likes spicy

    I'm not vegan but all of these recipes looked absolutely fantastic and I WILL be trying them! Just one note is that I was missing a side of veggies with the mushroom 'steak' and potatoes dish? The portion looked super small.

    Sameeee on being a lazy cook for myself (also vegan, a pretty competent cook, don't really follow any recipes, watch a lot of cooking videos)! If not for my omni bf that I try to impress/influence all the time, I wouldn't have tried so many wonderful Rainbow Plant Life's recipes! Highly recommend Avant garde vegan (Gaz) for restaurant-quality vegan food + From my bowl (Caitlin) for somewhat less involved but still interesting dishes :)
