  • onion usually play an important role in every curry base. Try out this wonderful onion salan basically salan is common thing which serves with biryani but this onion salan that will go with rice, roast, kebabs and other dishes of your choice.

    Ingredients:
    Onion 2 n
    Peanuts 2 tb
    Sesame seeds 2 tb
    Desiccated coconut 2 tb
    Onion chopped 1 n
    Oil 3 tb
    Mustard seeds ½ ts
    Cumin seeds ½ ts
    Ginger garlic paste 1ts
    Curry leaves 2 spr
    Chilly powder 1tb
    Coriander powder 1ts
    Turmeric ¼ ts
    Cumin powder 1 ts
    Directions:
    Heat a pan and dry roast the pea nuts, sesame seeds, desiccated coconut, in this add chopped onion, cook this till onions are tender, put the ingredients in the blender and make a fine paste.
    Heat oil in a pan add onions, salt, sauté them, and keep it aside,
    In the same oil, add mustard seeds, cumin seeds, ginger garlic paste, curry leave, chilly powder, coriander powder, turmeric, cumin powder and add peanuts, sesame seed paste mix it and add water once comes to boile put the flame slow for 15 minutes. Then add tamarind juice, salt, jaggery, mix it and put the lid cook for some time, in this add sauté onions cook for 12 minutes and switch off the flame.

    coconut dried are grated or crushed in a mixture. Alternatively you can use fresh grated coconut cooked on a very slow flame. :)

    I am from Mumbai, staying in Hyderabad for past 9 years. Whenever I ordered biryani, could never enjoy it coz of over over spicy taste of locals, had to eat biryani with dahi raita, fortunately came across your video and prepared it.... Turned out to be too good ... It tastes soooooo good if adjusted the spicy taste at home. 👍

    99% of the time his recipe come out great! Most of the time i look at his recipe and compare it with other chefs. Once you understand your ingredients well, meaning the flavor of each of the spices, you should be able to adjust the spices accordingly and not have to follow the recipe strictly. I am amazed when i combine 2 recipe styles! It works for me perfectly .
    Mr.Vahchef I want to thank you for all your recipe that you have posted, because of your post i have increased my recipe list tremendously and i more confident to explore new recipes.
    For those who tried and failed and posted bad and swearing comments; please try out the same recipe posted by another chef. Not by just posting that the recipe did not come out as expected but where it failed meaning texture, flavor etc by itself speaks volume and might help other people. There is no need to add filthy language to your comments,especially when the person you are referring to has made an honest effort to share his knowledge.
