I went to one of those bathhouses in Russia where: (a) they beat you with branches; and (b) have you transfer from big pools of ice cold water to the hot sauna. And everyone is naked. It was ... An experience.
Wonton, im a Chef here, the reason ur steak was inconsistent is because of the cut they used. Who ever butchered and or cut it probably didnt do the best job, hence why some areas are medium some other medium rare, and some mid well or even rare. This is also common with these cuts, thats why most restaurants will serve tenderloin, sirloin's, or strips because they r easy to cut and you get a full even cook out on the whole cut.
