Took me 2 hours so far using a jack and axle stands but still the disk is not off - it took this guy under 4 minutes to get that far - I reckon they disassemble all bolts first then fit it all back together again, before they start recording.
Unfortunately, the complexity of replacement is individual on each particular model of car and it all depends on the technical condition of the parts. I have an Octavia 1.4 TSI, 2010, presumably a 1Z4. The procedure is slightly easier as the caliper carrier bracket does not need to come off to change the disc.
WARNING Why have you not yet corrected the torque you have shown for the brake caliper carrier bolts from 75 up to 190 or 200 Nm - as pointed out by John Ralph below ?

Ah man I'm so annoyed, just took everything apart then realised I need an H7 Allen to get the caliper off - since when does anyone use 7mm Allens!? Literally never come across this in my life and haven't got one anywhere! Why didn't I watch the video before attempting it 🙈🤣

You quote 75nm torque for tightening the brake carrier bolts. I thought it was about 200nm. That’s a big difference. Which is correct please?

Copper grease should only be used on threaded connections. No need to grind new pads.

As far as i see in this video, you did not add copper grease only on threaded conections, but on whole surface between wheel and disk.
That's a lot of copper grease! And I'd never spray it on. A brush is far better.
