I'm 63. When I was a kid, muffins were quite small and were most commonly bran or corn. They were minimally sweet, and often served with lunch, split into two and buttered. FYI, gingerbread used to be like this too (read Beard on Bread to learn more). Basically, muffins were a bread substitute that you ate with soup or a salad. Then, in the 80s, giant cake-like muffins began to appear at fast food outlets in shopping malls. The days of the old-fashioned small lunch bread were done!
I made these yesterday they were SOOOO GOOD Update: I gave one to the maintenance man who fixed my A/C and he sent me a text later that said the muffin was “badass.”

This was such good timing for me. Our 2yo has been difficult with breakfast and snacks. I halved the sugar, doubled the flax egg and added a tbsp of sweetener. Absolutely lovely. I did another where I swapped out 1/3 cup of flour for cocoa powder. Really great, moist chocolate cake with a good crunch.
I like how all the reasons Claire lists to not like muffins are reasons I like muffins. It allows me to eat some cake for breakfast, without feeling judged for eating actual cake.
I prefer them to cupcakes because usually they have better flavour, and you can heat them up, they are kind of comforting, plus they are even easier to make. #teammuffin

That confused me though. Why would a 4oz scoop be a different size than a half cup measure? It’s still measuring volume & not weight. What is it supposed to be measuring 4oz of, if not water?
These came out so good! Not too sweet, great flavor from the cinnamon and maple, and a nice light texture even with all those good seeds in there. I added some slivered almonds and a few drops of almond extract too, which is pretty yummy. I’m vegan (and also pregnant and constantly craving sweets!) and I feel like these satisfy my desire to eat cake for breakfast while incorporating some wholesome seeds & whole wheat for sustained energy, and dialing back the sugar a bit.
"Tough muffin" would be such a nice description for some badass person who went through some shit and came out glorious. Also they look awesome and I want to try them.
I made this with only whole grain spelt flour, olive oil instead of coconut oil, and no sugar - instead using Lakanto monk fruit (the golden crystals and the maple-flavour syrup) - and it turned out great! - not dry at all. I did however use a few tablespoons more applesauce since I didn't use blueberries (which adds a little moisture) but dried fruit instead. I also used just a smidgen over 1/3 cup of olive oil instead of 1/2 cup of oil. Ran out of flax for the "egg" so used the same amount of chia instead. I also used chopped pecans and almonds in place of the seeds. Baked it for 30 mins. Despite the few substitutions I made, and despite the slight difference in amounts of applesauce and oil used, I kept all other measurements the same it turned out so well. Good base recipe. Will make again with other variations.

Just tried the recipe today and they are the fluffiest muffins EVER! I swapped the coconut out for butter (I don’t like coconut oil) but everything else stayed the same and let me just say…Best thing I’ve baked so far. This recipe is fool proof even for someone with little baking experience like myself :)

I had some blueberries that needed to be used and so I tried this recipe. I kept a few of them but brought the rest to my mom who is in memory care and the residents and staff all loved them.. I have made it 2 more time this week.. but I got lazy and used a square baking dish.. just as good and once I forgot the blueberries and it was also tasty without them.. this will definitely go on repeat. Tried your Mayer Lemon tart yesterday and it turned out great! The curd overflowed in the oven for some reason but the taste was absolutely fine. I used to say I’m not a citrus dessert fan but you made me a liar lol I tried your brownie recipe, chocolate chip cookie recipe, poppy seed cake recipe and the Lemon tart recipe so imma make this as well as soon as possible! Since i live in Korea, it was hard to get delivered your recipe book and some kind of ingredients (such as poppy seed and almond extract😅) but it’s all worth it!! Can’t wait to try this. You can also substitute the flax meal with powdered psyllium husk, round chia or xanthan gum which will result in a similar eggy consistency ( personally I prefer psyllium husk or flax meal )

If you wanted to try other alternatives for eggs in baking (and if you don't have access to flax seed) you can use aquafaba which is just chickpea juice. It's a really good substitute for eggs and makes really good pancakes
I love watching your videos even though I am aware I won't be able to recreate the recipes unless I want to go into engineering mode and veganise them. To know that you have some already vegan recipes I could try makes me so happy. Those muffins look delicious I will 100% make them myself
I'm definitely not vegan but I still love to know and use different ingredients since it adds variety to my diet and some 'substitutes' are hands down better than originals. I love butter and coconut butter the same.

As Claire was toasting the seeds while prepping and preparing other ingredients, I kept thinking "Seeds... Seeds, Claire... The seeds??..." By the time she got to the flax egg, I thought "SEEDS!! DON'T BURN THE SEEDS!!!" 😂
After watching your videos and actually making the lemon Meyer tart and the foccacia (btw best bake goods I've made), I finally got your book! My plan is to make EVERY SINGLE RECIPE in the book! Already added the flourless chocolate cake to my made pile!

If you wanted to try other alternatives for eggs in baking (and if you don't have access to flax seed) you can use aquafaba which is just chickpea juice. It's a really good substitute for eggs and makes really good pancakes
I love watching your videos even though I am aware I won't be able to recreate the recipes unless I want to go into engineering mode and veganise them. To know that you have some already vegan recipes I could try makes me so happy. Those muffins look delicious I will 100% make them myself
I know most bakers will say that products like butter, milk etc are (almost) required for baking but I'd love to see more vegan recipes
I'm definitely not vegan but I still love to know and use different ingredients since it adds variety to my diet and some 'substitutes' are hands down better than originals. I love butter and coconut butter the same.

These look so good! One of my best friends has an allergy to eggs and gluten, so maybe I'll try these but with alternative flours so we can have them together~
Aqua Faba is an amazing egg replacement. It also makes a great whipped cream or meringue.
