Excellent Steak on a Budget | Sous Vide Chuck Steaks in the Ninja® Foodi® 14 in 1 8 qt with SmartLid

  • Cooked correctly, you can turn a relatively cheap chuck roast into an amazing steak that will rival a pricey ribeye. Top that with some amazing red chimichurri and you have a meal fit for a King, or perhaps very powerful Duke. We will match our Joule Sous Vide against our new Ninja® Foodi® 14 in 1 8 qt SMART XL Pressure Cooker Steam Fryer with SmartLid in sous vide mode!
    2-3 pound chuck roast, cut into 1 1/2 inch steaks
    Cut chuck roast into steaks. Lightly coat steaks with salt both and freshly ground pepper on sides of the steaks. Seal in a vacuum seal bag of ziplock bag along with 3 garlic cloves, 2 sprigs of fresh thyme and a fresh bay leaf. Place in sous vide bath for 24 hours at 131F.
    Remove steaks from bag and pat dry with a paper towel. Sear steak on a very hot grill. Top with Red Chimichurri. Enjoy!
    For the Red Chimichurri:
    Ingredients:
    1 1/2 cup flat leaf parsley
    3/4 cup extra-virgin olive oil
    6 T red wine vinegar
    3 T fresh oregano
    1 1/2 T chipotle in adobo
    1 1/2 T Smoked paprika
    134 t crushed red pepper flakes
    6 cloves garlic
    Large pinch of kosher or sea salt and freshly ground black pepper
    Finley mince the parsley, oregano and chipotle and add to a bowl. Add the rest of the ingredients and whisk to mix. For best results: refrigerate for at least 24 hours.
    For the Cheesy Garlic Mashed Potatoes
    12 Yukon Gold Potatoes
    1/4 cup of Parmesan cheese (I used a mixture of Parmesan, Romano, asiago and mizithra)
    1 stick of salted butter
    1/4 cup milk
    1 bulb of roasted garlic
    A healthy pinch of salt and pepper
    Boil potatoes until soft. Mix in the rest of the Ingredients as you mash the taters.

    IM A vegetarian but this looks good for my husband! I'm always looking for cheap meat. I bought this Foodi and never thought I would use the sous vide function. thanks for this video.

    It's so excellent to know how easily this can be done with a fairly inexpensive cut in the Foodi, even without a proper vacuum sealer. I would love to try that red chimicurri as well! Thanks for this Galley fam!

      We have many may great items sous vide. Now, knowing I can have 2 different cooks going at different temperatures, there will be more sous vide episodes coming!

    Hi there, thanks for the video. Curious why you cooked it for 20+ hours? That seems really excessive compared to other sous vide steak recipes I've seen. Generally the listed duration is 1-4 hours.

      It’s because of the temp I cooked them at. Very small delta T between the steak and the water, so it takes a while to get them to equalize.

      The budget term was referring to the cut of meat. We were also showing that the Ninja would sous vide as well as the Joule (we have seen it as low as $79). Thanks for taking the time to leave a comment!
