Thanks Angel. That was easy and it turned out very well. I used a silver catfish. It's a freshwater fish and it naturally has a slightly slimy ( good slimy) fatty texture. I also added a little oyster sauce. For the sauce I used some slightly masked tofu and a dash of rice wine vinegar and loads of ginger. It was absolutely delicious

See, this is a preferable way to place the sauce in for steam fish. If you steam the fish with the sauce it will increase the rough texture for the fish. I really love the way this lady heats up the sauce with the oil and scallions and the rest and pour in.

If my guest get squeamish over a fish head, they can get out! XD Why be afraid of the head, when the cheek on the fish head is literally the best part! ^^

If they don't carry it, you can also look for Pearl River Bridge Superior Light Soy Sauce as a substitute (just add a bit of sugar and a splash of rice wine). Great recipe looks delicious! Would adding a crushed clove of garlic to the sauce overpower the dish, have you ever made it this way? Awesome dress by the way, very glamorous and super cute! I bet the sauce would be good over a deep fried fish also.
+Corn Starch I think adding garlic might be too overpowering, but if you love garlic you could certainly try it. :) Yes, the sauce would taste great over a deep fried fish as well.
