    Pineapple Cream Cheese Pound Cake
    Recipe:
    3 c sugar
    3 sticks softened salted butter
    6 oz cream cheese
    1/3 c ricotta cheese
    1 c undrained crushed or pu`ree pineapples
    6 eggs
    2 tea vanilla extract
    1/4 tea lemon extract
    3 c all purpose or cake (white lily)flour
    2 tsp baking powder
    1/4 tsp salt
    Icing:
    2 c powder sugar
    1 tbsp softened butter
    1 tea milk
    1 1/2 tea undrained crushed or pu`ree pineapples
    1 tea vanilla extract
    1/4 tea lemon extract

    You’re right this recipe produces a lot of cake batter. Here’s what I did…I used the Tube cake pan and I used loaf pans to cook the remaining cake batter. Thanks for sharing

    Wonderful looking cake I would like to share a tip for when anyone decides to make this delicious cake. As you’re putting all of your ingredients together for the cake preheat oven to 350 once done put your cake in oven drop temperature to 325 and bake for one hour your cake will come out golden brown every time and don’t forget if your cake pan is dark turn temperature down 325 instead of 350

    I loved your cake videos but this one turned out to dark for my taste. However I just finished baking mine. I baked it on 325. For about 70 minutes and it turned out great 😄. Now getting ready to add the glaze😉

    Hey Ms Vee I tried your cake it came out really good I only use the cream cheese I didn't have ricotta I kept my eye on a cake after an hour and 20 minutes I wish I could have sent you a picture but I did leave it in there a little longer took it out an hour and 30 minutes but thank you precious have a blessed day

    Thank you for this recipe. I've never make a poundcake with 2 tsp baking powder or pinapple puree. The batter was super fluffy and I will definitely give this one a try. I do like my cakes lighter in color, but the texture looked excellent when you cut it. May I offer you a common sense suggestion for anyone who has negatively commented that the cake looks over cooked? Take it out of the oven when it's the color you like.

      Yes am aware of that...sometimes I like my pound cakes with a dark appearance...I have a lot of bunt pans, cast steal ones too...thats just the one I choose that day

    They should do just like that! I'm a professional chef and we were taught adding the flour too early will over stimulate the the gluten in the flour resulting in a tougher dryer cake. It's ok to alternate the milk and flour AFTER you've thoroughly emulsified the butter, sugar and eggs.

      Yes it is...you can add it as soon as your butter and sugar has creamed over stirring or mixing can result to a dry and tough cake.

      If you are a chef then you should have also told the viewers to lower the oven temperature because the cake is way too dark.
      I was one of the students who took cooking lessons from Martha Stewart.

    Vee, I made this cake twice it is moist and delicious , my family love this cake! It stick to pan every time, can you please tell me what I can do to correct that issue. I use non stick pan ❤ thank you

      It's great to know you're enjoying the recipe. When you grease your cake pan, make sure it is well coated, even when you use a non stick pan. Try using crisco shortening & a light coating of flour to grease your cake pan, it works old school well. Thanks for sharing.

    I bake pound cakes too. I have made some mistakes. What I will say is with humbleness to you. I will never be on this channel because of fear. 1. Cake was too dark almost burnt and presentation is everything. I go by what I see. If it does not look good, I don't want it. 2. This cake may need to start off in a cold oven and place temp. at 325. I checked with other recipes. In fact I am making your cake now. I only you 1 cup of drained pineapples. I could not puree it- missing a part of my blender. Ya'll if you can't find pineapple extract, go to Amazon. I don't understand why McCormick stopped. I will let Ya'll know how this cake taste. Oh! Lady Vee the cake is being made for my church gathering. 3. I used a larger pan for it to expand. Instructions said bake for 1hr 25mins. I will check it after one hr. I don't over or under bake. I use timer and my Avon cake tester. Sister keep on doing what you do. Love and hugs. Cake Mama

    I make this cake, I use white lily all purpose flour I sift the flour twice, I bake it on 320 for 1 hour and 30 minutes, start in cold oven, good and moist

      It varies with different oven temperatures. Give it around 35 to 40 min. Start checking on it often. When the center start rising and cracking open and getting brown insert a fork or tooth pick in the center and if it comes out clean its ready if it has uncooked batter on it let it continue to bake until the toothpick comes out clean.

      350 degrees and 45 min to an hour. Ovens vary so check regularly after 30 min

    The cake is really dark lower the temperature also use White Swan cake flour your cake will not appear heavy like regular flour just a tip .

      I agree. It looks over cooked and almost burned. The texture is bad…too heavy…if not using cake flour, she should have sifted the regular flour at least 3 times. Everyone cooks different.

      Am well familiar with swans down cake flour, since, I chose to use lily white all purpose b/c it makes a fluffy cake. The cake suppose to hold a little weight b/c it is a pound cake. The flour type doesn't make the difference, but sifting does

      The cake did not appear heavy or was heavy b/c the pineapple juice lightened up the cake. I chose lily white all purpose flour b/c it makes good cakes. It was light and fluffy as seen in the video

      350 degrees I gave it 30 to 40 min in my oven...it may vary with different ovens so i would advise you to start checking it regularly after 40 min . Stick a fork or tooth pick in the center if it comes out clear its ready if not continue to bake for about 10 to 15 min at least until the toothpick comes out clear. It may also help if you don't turn your oven on until you put the cake in it. It helps the cake not to bake too fast on the outside

      I would’ve checked it at 55 mins. Too brown for me as well.

    I flip my cake bottom side up, and it only take 1 hour to 1 hour 10 or 15minutes on 325 comes out light golden Perfect🧁

    Looks great. I’ll be making this first thing tomorrow morning. I no longer use icing on most cakes, powered sugar works great too.

    This cake looks extremely dark try lowering the temperature also use White Swan Cake Flour so your cake isn't heavy

      No unless you don’t plan on eating it all within a week .,. Also depends on the temperature of your house…if you’re feeling somewhat uncomfortable about leaving at room temperature, it wouldn’t hurt to refrigerate it b/c circumstances are different for each scenario

      325 degrees and the time varies according to your oven, at the most give it an hr & 10 min or until your toothpick check comes out clean

      Thanx...45 min to an hour at 350 degrees. Minutes and degrees can vary according to different ovens. So start checking often after 30 min or when you start to smell the cake baking.

      It's best to follow the exact recipe for the same results...you might come up with a completely different cake texture if you do 8 oz cream cheese. The ricotta cheese helps complete the cheese ingredients

      No it want b/c the cake batter is dense (thick) enough to where it doesn't come through when baking a pound cake

    It’s not the recipe itself, it’s the dark cake pan that made this cake turn out darker. It looks very moist and delicious! Try making it in a lighter colored bundt pan.

      I admit I didnt set the temperature right when I baked it in a dark tube pan. That's why it turned out that way. I forgot to set it to a lower temperature, but it still was good.

      Most bundt pans are the same in size so I would recommend just getting a more deep set bundt pan. You want have to worry about your cake rising over in the oven.

      45 min to an hour. Ovens vary accordingly so start checking on it often after 30 min at the most. Set your oven anywhere between 325 to 350. Dont forget that you can try the toothpick or fork test. If it comes out with batter on it , it not ready if clean its ready

    Looks delicious the texture looks moist and yummy ... why was so dark? Is that normal or was it the black pan? I heard that the black color makes cakes cook quicker? I will try this receipe it looks awesome 👏

      You can set your oven on 325 degrees and let it cook for an hour & 20 min and it will not come out as dark as mine
