Classic Creamy Mushroom Soup
Ingredients
• 2 tbsp oil
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• 250g (1 lb) mushrooms, sliced (button, cremini, or a mix)
• 2 cups chicken or vegetable broth or water
• 1/2 cup cream
• 1 tsp dried thyme (or 2 tsp fresh thyme, chopped)
• Salt and pepper, to taste
• 1b tsp yoghurt (optional, for garnish)
Instructions
1. Sauté the aromatics:
Heat oil in a large pot over medium heat. Add garlic and sauté for one minute. Add the onion and cook until soft and translucent, about 5 minutes.
2. Cook the mushrooms:
Add the mushrooms to the pot and cook until they release their moisture and start to brown, about 8-10 minutes.
3. Add broth and seasonings:
Add the chicken or vegetable broth or water Bring to a gentle boil, then reduce to a simmer for 10 minutes.
4. Add cream:
Stir in the heavy cream and heat through. Taste and adjust seasoning as needed.
5. Blend for texture (optional):
For a smooth soup, blend with a blender. Add fresh thyme and season with a pinch of salt and pepper.
6. Serve and garnish:
Ladle the soup into bowls and garnish with yoghurt or fresh parsley. Serve with crusty bread or crackers on the side.
