My daiquiri is 75ml rum 37.5ml lime 30ml 2:1 syrup Sometimes I replace the simple for homemade grenadine. I believe it’s called a Bacardi cocktail even though if never use Bacardi!
The Corn n Oil is a very simple blend of Rum (traditionally Barbados) and Falernum. Nowadays maybe some Angostura Bitters get added. But that’s it. Your recipe above is 100% a Daq 👍
Plantation pineapple rum makes a beautiful daiquiri. I aslo do a tiki-esque riff on a daiquiri with 2 parts spiced rum, 1/2 part falernum, 1 part lime juice, and 1/2 part cinnamon syrup. Maybe at this point it doesnt qualify as a daiquiri but i still count it
Ha, no deffo not a Daiquiri, but who cares, there's no Daq Police to come after ya! I've give it my own name... not me personally, cos I can't name cocktails! But I'm sure you can come up with something. The Perkquiri...? 😇😂
Love a Mai Tai (just got my first bottle of OFTD, can't wait to use that for this), a classic daiquiri, a Hemingway daiquiri and the Painkiller is one of my primary standbys - I'm spoiled by a local farmer's market that keeps me in fresh cold-pressed pineapple juice. I love experimenting with different rums in all of those. Others that I love but play with less - Ancient Mariner (but usually just use demerara rums, I go a bit heavier on the allspice dram than the recipes call for, and sub demerara syrup for the simple) and Navy Grog (usually just use overproofs in those).
No Falernum or Sugar Syrup in the original Planters Punch, served at the Polo Lounge, Beverly Hills, circa 1960s, which also incorporated both light and dark Rums. Skip the Bitters.
Super video, I’ve been making cocktails at home for a while but still so much information. I like the Sekforde Lime, mint and Cacao mixer in a mojito, it also helps makes an awesome mocktail mojito. The Hurricane and Rum Punch are two I’ve never paid much attention too but after this most definitely. Sometimes I’ll double strain the Painkiller into a coupe or a martini glass with the nutmeg, makes it a little more lush
You do you is really calming me right now, I'm new to bartending, just for me and a few friends, and I'm hooking to the receipees I have, but now, it's way more easy to just know, ratio is important! If my glas is 200ml but I have only 50ml cocktail, that's garbage and I have to do it all again :D Your videos are great, now please do them in German! :D
Superb job 👏👏 Never get bored of watching these cocktail videos! Stack of info condensed in there 👌 Was just waiting on you to squeeze the 6 sections of lime in the glass but know how much you love showing off that expensive muddler 😝
I hear ya. But remember this is Beginner. The Mai Tai and it’s Rum blend is far from beginner. I mean you could use just one Rum, maybe even 2. But they do the cocktail no favours and don’t give a true reflection of the Cocktail. So the Mai Tai needs to be worked up to.
Steve. Why do you squeeze the limes for the Mojito in the glass using the rod? Are you not worried you risk cracking the glass? Is it not better to do all this in your metal shaker instead?
Muddling Limes you mean?! If you can break a glass by muddling, you’re using one cheap and thin glass. In 30 years, I’ve never broken a glass when muddling. Even fine crystal ones… 😂 (and I’ve never known anyone to make a mojito in a separate mixer tin or glass, then pour into a serving glass. Even in Cuba/Puerto Rico it’s made direct in the glass…by Muddling…but with actual Sugar.
Don't know about anyone else here, but I for one appreciate Steve's use of Pepsi over Woke-a-Cola (after all, Pepsi has indeed been proven to be the better tasting drink in blind taste tests). Cheers Steve! 👍👍
The Painkillers Ive made were fine but not great. Your recipe is a bit different so I'll give it a try. My Piña Colada is very popular with my guests 2 Plantation 3 Stars: 2 Pineapple Juice 1 Coconut (Coco Lopez or Reál) .25 Lime Juice (adds tartness to the pineapple) .125 Orgeat (adds a touch of nuttiness to the coconut) Blended with a glass of crushed ice until the big chunks are gone. I like the Hurricane very much but my guests are less fond of passionfruit. I often use Cointreau instead of sugar syrup in a Daiquiri and it's delicious. (is that a Cuban sidecar?)
@@scottnewbury2024 : Twice. The first time I thought it was OK the second time (after more experience with rum) I tasted it. I had my adult son taste it and we agreed and poured it down the drain. For now I've settled on Plantation 3 Stars for my light rum.
@LR Vogt 🤣 i like how you felt the need to emphasis your son is an adult. To be fair I tried it neat the other week and thought it wasn't very nice but love the stuff in a daiquiri
Only 5... choices, choices. Pain Killer ... not an obvious choice but a GREAT tropical suggestion. Daiquiri, check. Mojito, check. Rum Punch, check. You need to make room for the Mai Tai, so the Hurricane comes off the list. Explain yourself Steve, the Mai Tai doesn't make the short list?😁
I'm sure there's another explanation, but I'll venture to guess that the Mai Tai was perhaps not included due to it having so many possible iterations which some say stems from it's hazy and disputed origins.
I hear ya. But remember this is Beginner. The Mai Tai and it’s Rum blend is far from beginner. I mean you could use just one Rum, maybe even 2. But they do the cocktail no favours and don’t give a true reflection of what the Cocktail actually tastes like. So the Mai Tai needs to be worked up to. I mean there’s already comments on the video from people that don’t have the confidence to make these. So basic ingredients, with just 1 Rum is beginner level…and that’s what many Competent Rum Cocktail fans forget…
I think you’re agreeing with me…but just to clarify and translate what you’ve written for anyone reading…the amount of Ice DOES change the Dilution. Less Ice = Melting Quicker and more dilution. More Ice = melts Slower and Less Dilution. Same as shaking with 8oz of Crushed Ice and 8oz of Cubed Ice. Crushed Ice cos of the surface area will give MORE dilution 👍

Absolutely love your no nonsense approach to rum cocktails, nothing pretentious, just good and easy cocktails. Cheers mate 👍
Thank you Gordon. Appreciate that.
My favorite rum for a daiquiri is Plantation Stiggins Fancy Smoky Formula taste fantastic.
My daiquiri is
75ml rum
37.5ml lime
30ml 2:1 syrup
Sometimes I replace the simple for homemade grenadine. I believe it’s called a Bacardi cocktail even though if never use Bacardi!
I love a Dark and Stormy with Sainsburys Fiery Ginger Beer, as it has more of a kick than the Old Jamaica, which I find a bit sweet.
I first learnt the daiquiri as a corn n oil, DMF spiced 50ml, lime 25ml sugar 25ml served on ice with a dash of bitters
The Corn n Oil is a very simple blend of Rum (traditionally Barbados) and Falernum. Nowadays maybe some Angostura Bitters get added. But that’s it. Your recipe above is 100% a Daq 👍

My pleasure! Glad you found it helpful 👍

Great cocktails there. Need to do a Hemingway on the channel soon.
Don't you worry about the increased cancers with alcohol consumption of any amount?

That’s really funny. I had a double strained Painkiller Last Night. Then a Mango version. Absolutely delicious.
Superb vid, thank you fella.
Glad you enjoyed it. Thanks for watching.
Love this, thanks Steve
Glad you enjoyed it 🥳👍
Hello Steve. To vary the classic daiquiri, I simply replace the lime with grapefruit with the Rum bar for example. The Pain killer is my favorite 👍
Love a Grapefruit Daq. Which is bizarre cos I’m not a huge Grapefruit fan! But a Daq…wow.
Maybe the sweet grapefruit goes better 😁
Another awesome video! The painkiller is on my menu. Very tasty when you switch it up with OFTD. About to try the Rum Punch tonight.
Cheers Damien! 👍👍
Loved them all Steve, not quite brave enough to make them myself but maybe one day I will
Go on. Get stuck in. They’re so easy. But more importantly…GREAT FUN to make.
Superb show 👏

Ha. The Mojito is one of those rare occasions I get a Muddler out.

I like Diet Coke.
I like Dr Birds for my daiquiri

Think my Painkiller recipe is the Painkiller Recipe. It’s only 4 ingredients with the Nutmeg Garnish. No other way to really make it 👍
@@StevetheBarmanUK : It was just a different balance of ingredients. We had your recipe last night and it was delicious. !
You should try not blending your piña colada.
@@jimklemens5018 thanks. I have and it’s very good but blended is part of vibe for us.
@lrvogt1257 Blended drinks tend to separate and look nasty.
Do you add xantham gum powder to hold them together?
Flor De Cana 4! Nothing beats it! Not even debatable. 😁
The last bottle of Flor de Caña 4 I bought just tasted like ethanol. Bad batch maybe?
@LR Vogt possibly. I'm guessing by the way you said it you have had it before? If it was different then I'd assume a bad batch 👍

My daiquiris are 3 ounces rum, 1/2 ounce lime juice, and 3/4 ounce simple syrup.
Sounds great! Probs a little on the sweeter side for me, but that’s why everyone has their own specific ratio 👍

a standard Hawthorne Strainer and a Fine Strainer.
