Irish Brown Soda Bread (wheaten bread)

  • Chris’s Irish Brown Soda Bread (wheaten bread)
    250g / 2 cups Plain Flour
    200g / 1 ¾ cups Whole-wheat Flour
    1 tsp Baking Soda (Bicarbonate)
    1 tsp Baking Powder
    ¾ tsp of salt
    40g / 3 tbsp Softened Butter
    2 tsp Honey
    450ml / 1 ¾ cup
    For a sourmilk buttermilk substitute add 2 tbsp of vinegar or lemon juice to some regular milk. Stir then let it stand for about 10 minutes before adding to the bowl
    You can also add oats to this and play around with the flour ratios. If you prefer to use more whole-wheat then add an extra drop of buttermilk. The baking powder can be left out. I added this to make the crumb a bit lighter
    Bake for 45 minutes at 200C/392F
    Fan oven - 180C/356F
    Gas Mark 6

    Thank you Chris. Does it have proofing time?! Or no rest? Can we use rye flour or Grahammel instead of wholewheat flour or some oatmeal! Can we use platin yogurt instead of buttermilk ?!

      you can replace the flour with any wholegrain flour. No proofing. It’s a quick bread with bicarbonate of soda (natron) Yes you can use yogurt 😊

      ​@lilicandy9911 And if no ButterMilk available,put a couple of T spoons of Lemon Juice or Vinegar in some Milk or Plain Yogurt also works fine. ( and remember the Baking Soda!)

    I have this baking in the oven now, but mine was a bit too wet, so I added some more flour, hope it comes out OK. Next time won't add all the milk at once. Think it should be ok. I never follow recipes for this type of bread, just throw in flour, and melt butter and add to milk, add to flour till I think it has the right consistency, always comes out fine. Must look to see if you have made griddle bread. I do the same for that, and cook it on a cast iron griddle that belonged to my late mother in law

    My Grandmother would occasionally make what she called "Soadie" bread. As a kid I loved it! I think I'd have to stay away from it now because of the sodium level. When I make sourdough bread I use 80% sea salt and 20% potassium chloride in order to cut the sodium down. I can't tell the difference.
