i feel like deftones “Adrenaline” album was definitely nu metal. it was very rap/Hip-Hop and Metal oriented for sure. i feel that when it came to Around the fur and definitely white pony deftones started to become their very own thing. :D
As a Deftones fan, Adrenaline is one of the best Nu-Metal albums of all time. Chino can say whatever he wants, my dude was making Nu-Metal and it was amazing.
Their early stuff, especially the first album, fit in with the Nu Metal vibe pretty well. Adrenaline is definitely my favorite. I listen to it more than any other. Around the Fur is definitely the 2nd most listened to.
They started gaining popularity around when Korn first came out. There was a lot of rap metal type stuff getting popular after that soundtrack from judgement night came out then Korn released blind then all the sudden my friends brother is like "but have you heard of Deftones" and it was instantly amazing to me
I've been listening to them since White Pony and have never really thought of them as in the same genre as Korn and Limp Bisket and the rest. Out of all the bands considered Nu Metal I only listen to the Deftones.
I always kinda looked like Deftones as more alt. Rock. But they also always ended up on my playlists lumped in with a ton of nu metal too. Not embarrassed. Still love my nu metal.
After listening to and loving Deftones for 25+ years, they still sound new. And that applies to every iteration of their sound, every album. That transcends genre. They're classics and in a category all their own.
Deftones on the Adrenaline era was nu-metal, after that, it's just Alternative Metal mixed with a lot of genres. White Pny for example has a mix of alt rock and shoegaze in a lot of musics, Koi no Yokan has more Alt Rock in the sounds, Diamond Eyes has a heavier sound but not close to what nu-metal is, Around the fur i can see being called as nu-metal cuz of the sound but it has songs like Be quiet and drive (Far Away) that is alt metal instead of nu-metal, anyways, Deftones has their own sound (you can see it by checking their demo tapes.)

For me one of the biggest defining traits of nu metal is how it blends industrial metal and rap with grunge and alternative metal. Deftones were never really concerned with that, they went their own way with the shoegaze elements and I think that’s pretty cool

To me Deftones are Nu-Metal. They played in the same era with similar elements, especially during Adrenaline & Around the Fur. But all in all I dont really care. Nu Metal to me was a vastly defined space and that's what I like about it, because while there were similar elements, bands were still different. Linkin Park sounded vastly different then Limp Bizkit, which was definitely distinguashable from Slipknot, which you could'nt compare soundwise to Korn, which really did not sound like Deftones. That's what I miss about that era, because people tried out a lot of stuff and weren't necessary just copying each other and a certain sound. A thing I later really missed when it came to other genres like the whole 'core stuff or even genres like Melodic Death and what not. These genres didnt really developed much further, then what they were in the beginning.
