Brazilian but I'll keep the comment in English for the sake of it I can see why though, bread, rice... all cheap enough and easily makes people full so you eat less meat (which is expensive) there's one near where I live that will often have bread or pão de queijos for you to "snack" at the table right when you arrive, and they'll often serve pão de alho (garlick bread) and make a little "show" when serving their overpriced desserts, they'll insist you grab a drink asap as well... it's always the little tricks that works

As a Brazilian from the state of Minas Gerais (where Pão de queijo is from), I've gotta say that the video is great and I feel honoured to have an entire video dedicated to one of the most famous food restaurants we are known for abroad! Papa is love! But- I've gotta say the original and traditional recipe for Pão de queijo does NOT involve in any way a muffin tray to shape them. And the dought should not be that liquid as well!! They are rolled in the shape of gracious and precious balls of cheesy deliciousness!! We're just very passionated about our food in that state so I thought about leaving this note :>
Yeah there's no need for a muffin tray! I always get a really nice round ball when I cook it on flat baking pan. And it has a very smooth and crispy outer layer instead of the spongier surface you probably get with a muffin tray.

pretty good josh! as a brazilian, just saying: garlic bread is way more common in steakhouses or even at home barbecue (a churrasco, as we call it) than pão de queijo. pão de queijo is eaten more like a quick snack during the day, that goes nice with coffee. other meats and cuts there are very common and famous in our steakhouses and churrascos are: chicken heart (coração de galinha) and hump steak (cupim). the latter can be cooked either in slices (easier) but also in one big piece, that obviously takes longer to cook, but the end product is amazing . (p.s. - come to brazil!!!!!!!!!!!!!!)

I'mma be honest, I haven't watched the full video yet but I need to say, right off the bat, that I REALLY REALLY hope that the whiteboard at 0:20 is a road map bc now I'm invested in ALL of those ideas!
I am so happy to see him make churrasco and fried polenta. The pão de queijo looked off, I have never seen it done in muffin trays or with parmesan (we use mineiro cheese). He was missing some farofa. But overall, a very respectable reproduction of one of life's most delicious experiences (cutting churrasco well takes practice).
It's okay to use parmesan, it's probalby quite hard to find minas cheese there. Those premade in supermaket in Brazil use parmesan cheese too, but the reciep is wrong. One of the reason it looked off (dough too running) is because you're suppose to use hot milk, which kind of cooks the dough.
Love watching the videos with the crew. Makes me miss the days I could hang with all my homies. Now we're sprinkled all over Tx. These vibes are those good hang out vibes.
you should have someone from your crew pick out a box with mystery ingredients and you have to come up with a dish for them. Or get like a hello fresh box and try to make a completely different dish then what it was.

And filet mignon is not the most usual steak served in the churrascarias as well, there are lot of other options that are more usual

In Brazil, every house is a Brazilian steakhouse! It's common to have a churrasqueira built into the house with a regular chimney for exhaust.
