I just had a genius thought. Do a challenge where everything you use (except the pew) is bought from dux or bux. Have it "shipped" to you, and go straight out hunting. Maybe even do a bundle or two to promote it.
@Flair if you havent you have to try "Pulled goose" like pulled pork but with the goose breast.. Slow cooker with root beer, or Dr Pepper. 12, 24, ive even done 36 hours... then add your seasonings and barbecue sauce, on some fresh buns... unreal
Made a 10lbs of goose pastrami in the smoker. Make a ruban add sauerkraut thousand island dressing Swiss cheese. Make sandwich and put in frying pan until bread it grilled on each side. Won't regret it.
You might have simply not dried the duck off enough initially before salting? Use a mesh baking rack to dry cure. Place the meat right in front of the frige internal fan. Every chef agrees flake salt or Kosher salt just makes the best coverage for dry applications. It looked good would love to try it, I love duck.

Hmm think I might need to get over to the U.S to do some hunting and some range plinking.
