Statistically as a dreamer and enjoyer of science, I say there is other life out there, but unless we can learn ftl travel without turning into molten dust from the horrific speeds, we have a very low chance of ever encountering it. Assuming any other species are anything remotely advanced to begin with. We may just have aliens barely reaching their version of the Cambrian explosion for all we know.

I feel like you might be mixing up "science" and "scientific method". You're right, science is not all-knowing, and we shouldn't be arrogant with our knowledge. But that's not the scientific method. The scientific method is just, well, a method. And the very point of the scientific method is to make sure to rigorously remove biases and human error from experimentation. It's a method to gain knowledge, and a very good one at that, I'd say easily the best we have. But it's a tool, it's not knowledge itself. Science is knowledge that is obtained through the scientific method. That's the distinction. Ironically, the scientific method, if properly applied, would actually filter out arrogance and overconfidence, as it is a human bias. And just because there are things we don't know yet doesn't mean that the scientific method won't be able to get to the truth of the matter one day. You took radioactivity as an example; well, we learned about radioactivity thanks to the scientific method. Science itself was updated, but the basic principles of the scientific method remain the same. We can update the method to account for biases we weren't aware of before, sure, but the basic principles remain the same and have made pretty much all scientific discoveries of the past few centuries possible. That's not to say scientists always perfectly follow the scientific method, and that's not to say the scientific method is necessarily perfect as it currently is, but I'm personally convinced it is the best tool we have to learn about the world. If it can be improved upon, then awesome, that means it will get even better and will allow for even more discoveries. But I agree that science itself doesn't know everything. It probably never will. But does that mean filling the holes with unproved/unprovable explanations makes sense? I personally don't think so. I'm totally fine with leaving the unknown unknown, and I think it's a healthier way to look at reality. Of course, that's just my opinion.
