    That makes your videos more fun, its like we are in a journey with u exploring different things going fail/pass.
    Looks delicious though😋.

      Right? I feel like it helps to understand sometimes *why* something goes wrong. Cuz if I try a recipe on a channel and I fail maybe I have no idea why. But if the maker tries it and fails and explains, well then I don’t feel so bad!

    Chocolate ganache is my favorite way to mask a cake. You have to use a metal/steal smoother and a kitchen torch to heat it! That will make the ganache smooth. When you reheat the ganache to make it spreadable again, you need to vigorously stir and then let it get to the right consistency again.

    • @theclimbingchef
      @theclimbingchef 3 ปีที่แล้ว +3

      Or whip it so it spreads like buttercream

    thank you for being REAL. You aren't afraid to show the world what we cake decorators go through before we end up w/ a beautiful cake.The only change I would do is cluster the sails instead of each one separately coming out of the cake.

    To the ppl that commented, the icing artist is an arrogant cake decorator and is very hard on other bakeries' cakes, she is actually very polite about it. She understands the hustle and always appreciates their hard work! She just points out the mistakes like they are and always talks about it from the price to product perspective. Also watch her videos where she bakes/decorates her own cakes, she is presents every hurdle like it is, she doesn't skip to end product. Her videos actually have helped me when I was baking my own cakes b/c I now know how to avoid common mistakes and how to fix my mistakes while baking and decorating! This channel is gold!! Love you Icing Artist!!

    I always use ganache as my dam. Never any leaking or oozing. I also seal between my cakes with ganache.
    And when you make your ganache, use a stick immersion blender while still warm and loose. This will completely mix your ganache and you won’t get any chocolate bits. And smoothing ganache can be challenging. A bench scraper dipped in boiling water and excess water shaken off will smooth the ganache. I pop my ganached cake into the freezer in between applications. Then smooth with a hot bench scraper. I do white chocolate ganache from cheapie white chocolate chips from Bulk Barn + a good Callebaut chocolate combo. The white chocolate chips contain a fair amount of cocoa butter. For dark chocolate I use Chipits brand, as it’s got no emulsifiers, and lots of cocoa butter. To get gold on ganache, or any colour you need to use liquid gold colouring made for chocolate. Like colour mill or artisan accents. And despite the hiccups, your cake came out lovely. And sounds delish. That’s how we improve as bakers and decorators….the bumps, mistakes and hiccups.

  • @alisonscurr4395
    @alisonscurr4395 3 ปีที่แล้ว +68

    For future reference, to smooth your ganache, dip your scraper in hot water, wipe it dry and while still hot smooth out the chocolate. I always cover my cakes with ganache and find it really easy and always get nice sharp edges. I never set it in the fridge though. I let it set at room temperature. If you set things in the fridge then how do you know if it is stable to transport. It could end up a hot mess on delivery.

    I personally don't drink coffee, but just visually, that cake is stunning! Love the colors and the rustic, kinda slightly boho, texture/design! The different brown shades kinda make me think of black coffee, then coffee with a little cream, then coffee with lots of cream. And I think the gold helps to highlight the warm, yellow tones in the browns.
    I would never be able to decorate cakes half this good.

For the final icing I mix it with less sweetened buttercream then its easier to manage and shape. No matter the weather. It's thee best

    when icing a cake with ganache, if it hardened, use a metal scraper and heat it up a little to melt the chocolate. Or you can dip your scraper in hot water, wipe it and use it.

    It's easy to come off as "holier than thou" when critiquing other's work. That's probably why the commenter felt that way.

    I have made one cake from scratch ever, and it was a lavender chamomile tea cake. So if I could do it, I knew you could make a latte cake lol

    Why is adding coffee strange? My grandma did this all the time with her chocolate cake. It tasted awesome!

    That face Archie made is super cute. Have my 4 legged buddy (Case) laying next to me and as soon as Archie popped on the screen my dog popped his head up looking excited. Anytime he sees a dog on tv or in person he automatically thinks it’s his new best friend and they need to play. My dog is a nut but sweet lovable one! I too have been abused by chocolate, it’s no fun. We should start a support group.

    You were too hard on yourself. Chocolate can be amazing and a pain in the butt at the same time. I get the same way when something comes out wrong. Just gotta keep trying. You're awesome and my kiddo and I love your videos and cakes.

    HI Laurie I am a huge fan and wanted to clear your doubt. Whenever you are heating your ganache up, heat first for 15-20 secs then take it out asnd stir it and then put it back in the oven for 15-20 secs more. In this way, all of it gets heated up evenly and another plus point is that you can maintain the consistency in that way :).
