Chocolate ganache is my favorite way to mask a cake. You have to use a metal/steal smoother and a kitchen torch to heat it! That will make the ganache smooth. When you reheat the ganache to make it spreadable again, you need to vigorously stir and then let it get to the right consistency again.
I was thinking that same thing: why doesn't she just heat the blade? Then I realized it was a plastic one and I wanted to reach into the video and give her a metal blade.

I always use ganache as my dam. Never any leaking or oozing. I also seal between my cakes with ganache. And when you make your ganache, use a stick immersion blender while still warm and loose. This will completely mix your ganache and you won’t get any chocolate bits. And smoothing ganache can be challenging. A bench scraper dipped in boiling water and excess water shaken off will smooth the ganache. I pop my ganached cake into the freezer in between applications. Then smooth with a hot bench scraper. I do white chocolate ganache from cheapie white chocolate chips from Bulk Barn + a good Callebaut chocolate combo. The white chocolate chips contain a fair amount of cocoa butter. For dark chocolate I use Chipits brand, as it’s got no emulsifiers, and lots of cocoa butter. To get gold on ganache, or any colour you need to use liquid gold colouring made for chocolate. Like colour mill or artisan accents. And despite the hiccups, your cake came out lovely. And sounds delish. That’s how we improve as bakers and decorators….the bumps, mistakes and hiccups.
For future reference, to smooth your ganache, dip your scraper in hot water, wipe it dry and while still hot smooth out the chocolate. I always cover my cakes with ganache and find it really easy and always get nice sharp edges. I never set it in the fridge though. I let it set at room temperature. If you set things in the fridge then how do you know if it is stable to transport. It could end up a hot mess on delivery.
I personally don't drink coffee, but just visually, that cake is stunning! Love the colors and the rustic, kinda slightly boho, texture/design! The different brown shades kinda make me think of black coffee, then coffee with a little cream, then coffee with lots of cream. And I think the gold helps to highlight the warm, yellow tones in the browns. I would never be able to decorate cakes half this good.

Starbucks barista here!! Try the apple crisp frappe, seriously. It's an apple brown sugar syrup and they come with this apple spice goo on top- the frappe's way better than the macchiato tbh. Get the creme apple crisp frappe with chai and caramel (and cinnamon!) and you'll be rolling in fall!!!!!

I did something similar a few years ago with cupcakes, I used really strong espresso and added some instant coffee to the cake, then did a white chocolate frosting and white chocolate espresso beans on top because I'm a sucker for a white chocolate mocha. This makes me want to try it again
Here's a tip for spreading the cold gnache, fill a tall container with really hot water and use a metal scraper or icing knife in it, wipe it dry and use on your cake, repeat until you have silky smooth coating!
Don't be so hard on yourself! You have such a great talent and by the way you are so sweet. I personally love to see when DIY things, whatever they are, look handmade and have those little irregularities
I did a gold cake once. It was for my son’s 17th birthday and it was a Golden Snitch. It was covered in buttercream and my husband etched in the patterns that are on a snitch. It was super cool and our son loved it…and yes, it had streaks! BTW-your cake is lovely!

On the ganache topic - it should be kept at room temp not in the fridge :) it’ll reheat nicely. An immersion blender is my fav tool when dealing with ganache

Great idea :) It looks so pretty and DELICIOUS! Also you may have been able to just take a heat gun or a hair dryer to the cake when you did your crumb coat to soften it. I’ve done it before, you just have to be careful not to melt it ;)
@@TheIcingArtist it just gives the chocolate on the surface of the coating some heat for it to melt and then you can add more structure to it. Using a blow dryer might be better because heat gun cud be too strong and wud give it an oozing consistency. Also, chocolate makes itself difficult for you cuz you’re a confident person. Tougher people, tougher challenges my friend. ⭐️⭐️😇😇😇

Coffee cake is the bomb!!! I grew up eating this. I think it came out in the 70's in Australia and was hugely popular as a coffee based cake with coffee icing 🤤
Ganache icing is best smoothed with a metal scraper. If it gets too hard too quick then you put the metal scraper in hot water for 5 seconds, wipe it dry then smooth. It gives thee best results. For the final icing I mix it with less sweetened buttercream then its easier to manage and shape. No matter the weather. It's thee best

when icing a cake with ganache, if it hardened, use a metal scraper and heat it up a little to melt the chocolate. Or you can dip your scraper in hot water, wipe it and use it.
That face Archie made is super cute. Have my 4 legged buddy (Case) laying next to me and as soon as Archie popped on the screen my dog popped his head up looking excited. Anytime he sees a dog on tv or in person he automatically thinks it’s his new best friend and they need to play. My dog is a nut but sweet lovable one! I too have been abused by chocolate, it’s no fun. We should start a support group.

HI Laurie I am a huge fan and wanted to clear your doubt. Whenever you are heating your ganache up, heat first for 15-20 secs then take it out asnd stir it and then put it back in the oven for 15-20 secs more. In this way, all of it gets heated up evenly and another plus point is that you can maintain the consistency in that way :).
I think it turned out great! Love your videos...struggles and all! Makes me feel better knowing that everyone has things that don't always go as planned.

Ganache icing is best smoothed with a metal scraper. If it gets too hard too quick then you put the metal scraper in hot water for 5 seconds, wipe it dry then smooth. It gives thee best results. For the final icing I mix it with less sweetened buttercream then its easier to manage and shape. No matter the weather. It's thee best

That face Archie made is super cute. Have my 4 legged buddy (Case) laying next to me and as soon as Archie popped on the screen my dog popped his head up looking excited. Anytime he sees a dog on tv or in person he automatically thinks it’s his new best friend and they need to play. My dog is a nut but sweet lovable one! I too have been abused by chocolate, it’s no fun. We should start a support group.

HI Laurie I am a huge fan and wanted to clear your doubt. Whenever you are heating your ganache up, heat first for 15-20 secs then take it out asnd stir it and then put it back in the oven for 15-20 secs more. In this way, all of it gets heated up evenly and another plus point is that you can maintain the consistency in that way :).
