You can add a mirror in the kitchen to bring in additional light. And with the corner cabinet, I added a little rechargeable light in mine. Hope this helps. 😉 25:38
I still live at home for the time being, so I usually cook for myself & my dad, but when it's just me I do struggle to cook just for one. My biggest tip is to think of cooking as a form of self care - providing yourself with the nourishment you need. I try to aim for both nutritious & delicious. Hope that helps 💕

@JessicaRoseWilliams I just seem to get little piles of mess that accumulate, paperwork on side on kitchen top, random bits lying around, not sure where to put odd bits and pieces, difficult to throw those useful bits out but no where to put them...that's before u get to sentimental stuff but generally it's the piles of stuff I leave lying around I can't seem to stop doing this. It drives me crazy. I want clean-ish sides x

When I lived alone and now I am married I have always batch cooked for the week. Soups, casseroles etc and freeze any leftovers. Saves time and more cost effective. You always have something in the freezer for when friends visit too. X
I don't live alone, but I am the only vegan in my family. It makes mealtime tricky, especially with two very, very hungry teenage sons. I do a lot of batch cooking. I'll make things like split pea soup in the slow cooker and freeze a couple of servings in a jar. Or, I will make burritos and freeze them. Lentil spaghetti sauce can be frozen (so I eat half then put the other half in a jar, I have a large storage of jars from pasta sauce/salsa/jam) I also make beans in the slow cooker in big batches, then portion them into smaller freezer bags for easy meals for myself. Vegan fried rice and Asian noodles are my favourites, so those don't ever end up in the freezer =)

Today I made lentil loaf, half will go in the freezer, or I will buy vegan sausage and make them into sausage rolls and freeze half. Hope this helps. I am married with two sons, but I am the only one who eats my vegan food. =)
I live alone and I'm same as you with struggling to feed myself properly, I have no enthusiasm to cook just for myself, last night made homemade pizza with my grandson when he stayed overnight, unfortunately I don't have the grandchildren staying every night x
Oh the struggle is real isn’t it! My friend Jack is single and has green chef too so he had the idea to do FaceTime cook alongs for motivation and to feel less sad 😂😂 which I thought was clever x
Never liked cooking. I do it because my two young adult children are home again. My son is moving out on Wednesday but still I cook for my daughter and myself. Hate it lol😂 I always want it be as fast as possible!! 💚🌿🌷
